Roasted Creole Potatoes

Oh my, this was yummy! I loved the spiciness of this, but scale back if you prefer a mild flavor. Other than small changes based on preference (entire onion and green pepper) the only thing I changed was adding mushrooms. Next time - and there will be one - will increase onion and pepper to perhaps 2 and add two cartons of mushrooms. My husband even suggested including shrimp or crawfish. A good andouille sausage will also make all the difference.

Chilean Potato Pie (Pastel de Papas)

My daughter has made this several times for Food Day in various Spanish classes. It was there this recipe was renamed Chilean Crack Potatoes; you find yourself thinking about how to get more for later in the day. I just made it myself for the first time and would suggest cutting the oil by more than half. Colby Jack is a substitute for the cheese, and we use 4 oz. Oh, in the interest of time, I do use garlic instant potatoes; two 4 serving envelopes. The other reviewer is right, it could use more potatoes - depending on preference. Without a doubt these would be over the top if made wtih real potatoes.

Cinnamon Swirl Bundt Coffee Cake

I really liked this...Although I did need to make a substitution - I didn't have enough sour cream and don't use plain yogurt. Soooooo, I used peach non fat yogurt. Surprisingly nice change, very subtle peach flavor. I certainly will make this for my "yellow bus of freedom brunch" (first day of school party for moms)with the suggested brown sugar and maybe even another fruity yogurt!

Stuffed Jalapenos III

A big hit at our "Waiting for Hurricane Frances" party! I will certainly make these again with the changes mentioned (breading them and topping with shredded cheese). The cooking time was WAY TOO LONG. I baked them for 25 minutes at 350 degrees and next time will add the shredded cheese at the last 5 minutes.
