Pat's Mushroom Saute

I reduced the recipe to 1/4 of the original, and put it onto some grilled chicken sandwiches. Excellent!

Cajun Chicken Pasta

Not nearly as good as I'd hoped it would be, this recipe would rate only "fair" in my books. But, I did forget the parmesan cheese, which I believe would have made a difference. I also used evaporated skim milk, which was a mistake. I will make this again, but I will use Parmesan and real cream. I will also make sure to only put in 2 tsp of Cajun Seasoning... I used 3tsp and it was too spicy. Maybe also a little extra lemon pepper.

Margarita Party Pie

Pretty good. The pretzel crust is EXCELLENT. My pie didn't set up incredibly well... but it tasted good. I did not find it too alcoholic. One piece of advice: This pie has to be served frozen... no on-the-counter time.

Curried Couscous

Overall, it's pretty good. I only put in one apple (needed more!), omitted the banana (allergy), and added a handful of raisins. Next time, I'll cook the couscous in the broth, add more apples, raisins and curry powder, and maybe a little bit of allspice and cloves. All-in-all, a good side-dish.

Army SOS Creamed Ground Beef

I like it with ground turkey and chicken bouillon. I also add some frozen peas, and serve it over egg noodles. Yesterday, though, was the best ever... I served it over orzo, which mixed in nicely. I might add a little paprika for color next time.

Banana Bread I

Very basic, but good. I added healthy dashes of allspice and cinnamon, and a teaspoon of vanilla, which made all the difference. I baked it as one 9x5 loaf as well. An excellent banana bread.

Slow Cooker Chicken Creole

Yum! This was just wonderful. Perhaps a little salty... but that's okay. I used ~3 Tbsp of Creole seasoning (prepack from Kroger), added a little zucchini and used oyster mushrooms instead of canned. The chicken was wonderfully done... everyone enjoyed it. I'll make it again in a heartbeat.

Tiny Chicken Turnovers

Very delicious... but so time consuming. They took me nearly 3 hours to make. I also had left-over pastry dough... so the next time I make it, I'll use a 3" cutter instead of a 2 1/2" one. Maybe even bigger.

Breaded Parmesan Chicken

I can't say I followed the recipe exactly... I used bread crumbs instead of stuffing mix, used no parsley, and added garlic salt... but it was wonderful. The curry powder added just the right kick to it to make it so much better than Parmesan Chicken I've made before. Thanks, Dusti!

It was just too sweet... and I didn't even use as much ketchup as it called for. The next time I make this I'll only put in 1/8 cup of ketchup.

Orzo with Parmesan and Basil

Very nice. I added 1/4 cup of chopped fresh tomatoes and used margarine. We liked it... and I'll probably make it again. Next time, I'll add a little textured vegetable protein (TVP) and mushrooms to make it a more hearty meal.

Basil Chicken over Angel Hair

Excellent. I cut it in half for just the two of us... but put in a little more tomato than the recipe called for and a little more hot sauce. I will make this again and again... it's so fast and easy.

Hearty Meatball Soup I

I added 3/4 cup of rice and an extra cup of water and cooked covered. I also omitted the celery (didn't have any) and corn (don't care for it) and used half of the onion in the recipe. It turned out like meatballs in a thick sauce. Wonderful, but not a soup. Next time, I'll use the celery and maybe add frozen peas and more water.

Very good. It's heavy on the tomato... but good. I halved the amount of onion and added a little cayenne pepper for spice. I also had to add a little more water to fully cook the potatoes, and I cooked it covered for 25 minutes, uncovered for 10.

Cajun Spice Seasoning Mix in a Jar

This is a great recipe, and I will make it again. I used the Cajun Seasoning recipe available on this website, and it turned out great. The only warning I have is that it will make your kitchen very smokey.

Chicken Breasts Pierre

Excellent. Will make again! I cut it down to 2 chicken breasts and halved everything in the sauce. When I make it with all 6 breasts, I'll double the tomatoes. I also omitted the celery seed and substitued a tsp of yellow mustard for the mustard powder, because I had neither in my cupboard.

Basic Flaky Pie Crust

Everything I hoped for in a pie crust. If you don't have a pastry blender, hold 2 knives together in one hand, put shortening in the bowl with the flour, and cut the shortening with the two knives repeatedly until it looks like small peas. Be sure to mix the flour while you do it to cover the shortening fully.
