Ultimate Potato Soup

Very good. To make this vegetarian, I used vegetable broth and some Better Than Boullion "No-Chicken Base" (boullion paste that tastes like chicken, with no animal products). Worked great! I also used fat-free half and half to make it lower in fat and calories. Will make again.

Broccoli Chicken Casserole I

Great! Following other reviewers, I doubled the soup (using 98% fat free soup), added chopped mushrooms and added a little basil and garlic salt. Then stirred it all together (with stuffing mix) and topped with bread crumbs and Parmesan. I will definitely make this again.

Penne With Garlic Pesto

Not the best pesto in the world, but still quite good. It's amazing that it's that good with so little fat! This is now my new default pesto recipe, and I'll use the pesto in everything in the future. I only used half the vegetable broth, though.

Coconut Meringue Cake

Quite good, with a great flavor. I read what another reviewer wrote and started baking the cake before I put the meringue on (~5 minutes). I didn't need to do that. Next time, I'll probably add a couple more egg whites to the meringue, just to have a thicker topping.

Mom's Chicken Cacciatore

Quite good. I substituted port wine for the white wine, left out the green pepper, doubled the tomatoes, and added some extra dried basil. It's a good cacciatore. 4 stars without my additions, 5 stars with them.

Vegetarian Tortilla Soup

Very nice. I added a bit of paprika and cayenne, like a previous reviewer. The only thing I wish I had done differently is to break apart the tortilla chips (or use tortilla strips) .

Lentil Soup

Yum! I doubled the recipe and added a little chicken boullion. This is one of the best lentil soups I've ever had. It is now a mainstay of my kitchen.

Hershey's ® Chocolate Mousse

Yes, it's very sweet. A bit sugary. But a very good, traditional chocolate mousse. Dang, it's good. Suitable for serving with fruit (I did for a party) or as a fancy dessert in a nice cup.

Chicken, Cheese, and Biscuits

Just as advertised... chicken, cheese and biscuits in a cassrole. Good, down-home comfort food. I replaced the green beans with broccoli. I found I needed a little more milk added (my mixture got too thick), and that it fits best in an 8"x8" pan. Don't even try a 9"x13".

Coconut Cream Pie IV

Excellent. Just make sure that you boil it for an extra 30 seconds, return it to the heat after putting in the coconut and butter, and allow the pie to cool fully (in the fridge) after baking.

Creamy Pesto Shrimp

I made this with imitation crab and some homemade pesto. Man, it's good. The imitation crab adds quite a bit of sweetness, which is accentuated in the leftovers the next day.

Lemon Garlic Tilapia

I used garlic powder instead of chopped garlic, and margerine instead of butter, and it was wonderful. My 2 filets were done in 25 minutes (maybe a little overdone, even). Very good, with fairly subtle flavors that accent the tilapia well.

Greek Potato Stew

Very tasty... the flavor comes from the kalamata olives, so don't forget them. When it came time to eat it, the olives themselves were a little strong flavored, but the potato base to this stew was excellent. This is a great side-dish.

Jambalaya

I substituted some Turkey Kielbasa for the Andouille sausage, used vegetable oil, and didn't have the file powder. A pretty standard Jambalaya. A little spicy, but quite good.

Eggplant Tomato Bake

Pretty good, a nice mix of flavors. I added a little dash of seasoned salt and some bread crumbs on the top of the slices of eggplant. This recipe does NOT make for good leftovers, though.

Very nice. I used angel hair... which I wouldn't really recommend, as there just isn't enough sauce to cover that much surface. Perhaps some spaghetti or penne next time. What really made this dish amazing, though, was using it for bruschetta! I spread a little on some bread with mushrooms and topped with parmesan... it was perfect!
