Garlicky Quinoa and Garbanzo Bean Salad

Very good. I added chopped onion to give it a little depth of flavor, and used less olive oil than required. I kept the broccoli raw, but chopped fairly finely. Very nice.

Vegetarian Kale Soup

Jewish Style Sweet and Sour Brisket

Although I was skeptical at first about the idea of sweet and sour flavors in brisket, I made this and took it to a Chanukah dinner. Jews and gentiles alike loved this dish! A couple of minor deviations. First, I started with a corned beef brisket (all I could get on short notice). After boiling, I removed the brisket from the boiling liquid, sliced, and placed in a dish with cooking liquid to cover. I then refrigerated for only an hour before the party and re-heated in the oven until boiling again. I served it with some of the cooking liquid thickened with cornstarch to make a "gravy". Delicious! I will make this again, certainly.

Lentil Quiche

I enjoyed this quiche very much - I liked the diversity of texture within it due to the lentils. My girlfriend didn't love it... she thought that quiche should be smoother, without the toothiness of lentils. She also felt that a quiche should have a crust, so this may be more frittata-like. So, a slightly mixed review in my house. I did find that I had to cook the lentils for the full 20 minutes, unlike some previous comments. I made a couple of minor modifications: as others did, I omitted the tomatoes. I also sautéed the broccoli florets and onions with a clove of garlic instead of baking the onion in the pie pan. I did this so I could prepare it ahead of time and put the pre-made quiche in the fridge to bake later (which worked fine). I also added some shredded mild cheddar/jack mix as well as some shredded Parmesan cheese. I think the cheese is necessary.

Wild Rice And Chicken Soup

This was a wonderful soup, though we made a couple of changes. I added a little more chicken broth (3 cups), and instead of 2 cups of heavy cream, I used 1 cup heavy cream and 1 cup milk. This made it slightly less heavy. I also added a handful of dried mushrooms towards the end of the initial boiling of the rice, broth & water. I also used cubed chicken breast, which worked well. Overall, a wonderful soup that is highly recommended!

Smoky Four Cheese Macaroni Bake

Excellent Macaroni and Cheese! Instead of liquid smoke, I added Bacon Salt, and as other reviewers did, substituted a hearty dollop of sour cream for the cream cheese. I took it to a Super Bowl party and it was gone quickly. Will make again and again!!

Vegan Brownies

Excellent! I followed the advice of other reviewers and substituted 3/4 c. vegan margarine for the oil, reduced the water to 3/4 cup water and added 1/2 cup coffee, as well as a dash of cayenne pepper. As one reviewer suggested, prior to adding the other ingredients, I combined the water/coffee with the flour to allow the gluten to form up (then added everything else, poured in the pan and baked). I frosted them with my own frosting made of margarine, melted chocolate chips, almond milk and powdered sugar.

The Perfect Mai Tai

I doubled this recipe to serve to a large party (actually making two doubled batches). It was excellent! We did as others have suggested, to eliminate the 151 rum in favor of a 1:1 dark to light rum combo. Added a little extra curacao for a little more orange-y flavor.

Southwestern Caesar Salad

Wow... this dressing is amazing! It's also flexible. I used fat-free mayonnaise and low-fat sour cream to make it a little healthier. I also omitted the anchovy fillets, but added a few drops of fish sauce (made from anchovies). Remember that your salad dressing container must have a large enough opening to allow the Parmesan cheese to get through!

Red Onion and Goat Cheese Tart

This tart was pretty good, but not amazing. I found my pie crust to be full with 2 large red onions, sliced thinly. Adding a healthy dose of freshly ground pepper on top after cooking makes it quite good. I also added a touch of sharp cheddar to the top prior to baking. I suspect mine would have been better had I bought the better goat cheese (not the bargain kind!).

Mushroom Risotto

Amazing. Simply awesome. I omitted the celery and added 2 tbsp of chopped fresh rosemary to the dish. I sliced some grilled chicken breast and placed it on top of the risotto (for my non-vegetarian guests). Serve with a fresh salad. And, of course, as everyone else has mentioned, be sure to use Arborio rice. Look for it in the bulk foods section for the best deal. A tip: As this is risotto, you do have to spend the entire time stirring it, or it will burn to the pan. However, if you want a little security, you can make it in a heavy nonstick pan. That way, even if it sticks a little, it comes off quickly and you're fine.

Peppermint Meringue Cookies

They turned out okay... but I made some mistakes that you should avoid. First, be sure to watch the cookies. For me, 90 minutes was too long. Second, if you are piping the meringues out, make sure that the candy canes are very finely crushed. Third, beat the eggs a little longer than you think you should (call it very stiff peaks). Folding in the candy canes causes the eggs to deflate a little bit. And finally, don't add extra peppermint extract like I did... mine are just TOO minty.
