Hurricane's Chicken Casserole

This is incredibly easy! I have also tried it with sweet corn and cornbread stuffing for a change and that was yummy too! I wouldn't call this gourmet, but it's a good throw-together dinner, great for a weeknight casserole.

Garlic Butter

Cut back on salt (maybe use garlic powder in place of some of the garlic salt?) and it's a winner! I also added a few roasted garlic cloves because I had roasted a head of garlic for another recipe. 5 stars with less salt!

Mock Tuna Salad

Cordon Bleu Chicken Rolls

This is delicious. Pounding the meat very thin helps it cook properly and makes rolling it up easier. I had honey corn flakes on hand and didn't care much for them, especially with the sauce. Next time I will use egg in place of the butter to keep the coating on better, and either plain cornflakes or butter cracker rounds. Update: After making this recipe a few more times, I decided that although it has great flavor, it is a tedious recipe. I do not make this version of cordon bleu, BUT I still use the sauce! GOOD sauce.

Tofu Peanut Stir-Fry

This is absolutely delicious! It's become our favorite way to eat tofu! Turns out fine if you don't have ginger on hand, but it's better with it. I would recommend this to anyone who would like to try tofu.

Grilled Corn on the Cob

I added garlic salt in place of table salt. I left the husks on and wrapped it in foil, shiny side in, tossed in the grill basket in the grill lid for about 30 min. I found the butter cooked away and the corn was a bit dry. Next time I will either add more butter when I season it, or put more on right before I eat it, because it still had great flavor.

Fire Side Coffee

This is great for camping! I remember camping with my dad when I was a little girl and his camp-brewed coffee always had grounds in it and was bitter. Those were the days, but this is the simple choice for decent coffee. Bring the mix already made and just add hot water!

Garden Pasta Salad

I used halved cherry tomatoes, and unpeeled, thinly sliced cucumber, along with a can of drained and rinsed sliced black olives, and ONLY ONE bottle of zesty Italian dressing. This came out YUMMY! A hit at a potluck BBQ! I will definately make this again!

Camp Cornbread

I took others advice and only used 1/3C of sugar. We took this cornbread camping with us...it was so moist and delicious! I grilled slices on the grill and poured chili over it in bowls and it became a camping favorite! MMM MMM!Thanks so much for the great recipe!

Super Duper Bean Salad

What a healthy, colorful salad! This recipe was exactly what I was looking for in a multi-bean salad! But it made WAY more than 6 servings! As tasty as it is, I can only it a small serving of a salad like this at a time! Will make again-in a smaller proportion!

Oven Fried Parmesan Chicken

Yum! Before dipping in the garlic butter, I rolled the chicken around in a flour/pepper/onion powder/garlic powder mix, for extra flavor. I turned this recipe into Chicken Parmisiana by smothering the chicken in spaghetti sauce and shredded mozzerella. So good!
