Cherry Chocolate Shortbread Cookies

Very good shortbread recipe. I love chocolate and cherries together, but I didn't like them in a shortbread as much as I though I would. I would make these again, but I think either leave the cookies plain or add chopped pecans. Just a personal preference. Also, I did not use the icing from this recipe but instead used 'Chocolate Icing' by Linda Carroll and it worked out very well.

Chocolate Icing

Perfect! Used cream instead of milk and added just a tiny splash more. Used a silicon spatula to combine till smooth then loaded into decorating bag and piped onto cookies. Worked out great and tasted good too. Used semi-sweet mini-chips since it's what I had. Will absolutely use again to pipe onto cookies, brownies, and other desserts. Seems like it's a bit thick to use as a dipping icing though but could probably just add more milk to thin it out.

Chocolate-Filled Crescents

These were better than expected. I spread cream cheese sweetened with powdered sugar before sprinkling the chips. Super easy to make. Make sure you have a glass of milk to go with!

Sugar-Free Spiced Applesauce

Pretty good. I needed more water than called for as it dried out. If you aren't used to the taste of agave, I recommend you add a little at a time, to taste. I served this over pork chops.

This was just alright, but not great. It needed more salt, herbs, and tomato flavor so I fixed it up a bit. I added garlic powder, Italian seasoning, tomato paste, and -since I had some to use up- black beans instead of pinto. After the adjustments, this was quite tasty.

Ham and Broccoli Au Gratin

This was alright. I felt the need to add some finely chopped fresh garlic and freshly cracked black pepper, which turned out to be good additions. I think the onions should be sauteed a bit first as they had too sharp of a raw taste. Also, the crescents were a bit doughy on the bottoms and the broccoli packet provided hardly enough cheese sauce. Wish I'd added more mozzarella, Parmesan, Asiago, and Romano cheese to the mix.

Easy Weeknight Chicken Parmesan

This was alright. Need a better method to get the crumbs to stick. The garlic browns too much and tastes burnt. The sauce has a rather strong roasted pepper taste compared to roasted tomato. The crumbs get soggy when the chicken cooks in the sauce, and the sauce gets all crumb-y. Not bad, but I'll stick with my usual chicken parm.

Cornbread Stuffing with al fresco® Sweet Apple Chicken Sausage

I thought this was really good. The recipe should be revised to brown the sausage separate from the onions and celery. The only real downfall was how terribly dry it is, and I even doubled the chicken stock. You need to use enough stock to really get all the cornbread chunks wet. Other than that, flavors were really good. I used Jiffy mix for the cornbread.

Sweet Apple Chicken Sausage, Endive, & Blueberry Salad with Toasted Pecans

This was ok, but we really didn't care for warm sausages on a cold salad. It would be better if you brought your greens and blueberries to room temp first. I felt it also could've used more pecans and greens compared to the amount of sausage. Had to skip the cheese (no goat cheese during pregnancy). Not sure I'd make this again though.

Italian Chicken Sausage Risotto

This was much better than expected! Although, I used the Garlic & Herb Chicken Sausage because my husband doesn't care for the Sweet Italian Chicken because of its strong fennel flavor. I only used half the wine, and used homemade chicken stock instead of commercial broth. Just a note, this makes good-sized portions. I made half the recipe with just 2 sausages and we had it as a main dish with green salad, but if you want to make it as a side dish you could stretch the portions perhaps twice as far.

I made a few additions: yellow bell pepper, sliced mushrooms, chopped garlic, and broccoli florets. Came out pretty good, but needed more salt and pepper. I didn't have Italian style Panko, just plain and didn't bother to add Italian seasoning to it, but I don't feel it made much difference. Also used egg noodles instead because they seemed better for a casserole. I think adding the garlic and mushrooms is a must!

Quick Shrimp Lo Mein

I made this without shrimp as I was looking to make a veggie lo mein that didn't call for hoison or fish sauce. This was really good except that I eyeballed the oyster sauce and added too much. I cut some of the water and used a little rice vinegar and it was a nice addition. Skipped the cabbage as I didn't have any and added shredded carrot. Will make again! (and properly measure the oyster sauce so it doesn't come out so strong).

Sweet and Sour Pork III

Excellent! Pork had great flavor from the marinade. I added carrot to the veggies as a preference. Didn't use as much water as called for. I mixed the sauce in advance (when I prepped the pork) and then dumped it in a pot to thicken when it was time to cook it. Poured the sauce over the pork and veggies just prior to serving. Next time I will thicken the sauce more as it was thinner than I would have liked.

Progresso® Curry Chicken

This needed a few changes to be five stars for us, but it ended up turning out REALLY YUMMY! Instead of serving a veggie side dish, I steamed some broccoli to add in after stirring in the whipping cream-it was a great addition! I like curry, so as a personal preference I doubled the seasoning. I also felt it needed some kick so added red pepper flakes to taste. The sauce was a little on the thin side so I thickened it with a cornstarch slurry. I highly recommend topping with cashews, as suggested. We really enjoyed this over Basmati rice with some butter-brushed garlic naan.

Crispy Garlic-Parmesan Chicken

While it certainly wasn't soggy, the coating wasn't crispy enough to earn 'crispy' as the first word of the title. This dish was lacking some major flavor too. I think maybe seasoning the chicken with salt and pepper may have helped. The pasta came out OK with lots of extra Parmesan on it. This recipe just didn't tickle our taste buds.

Crispy Pork Cutlets

Perfectly crispy coating! I skipped the jalapeno in the sauce since I'm not a fan, and after tasting it I decided to add a squirt of Dijon. I also cheated and used pickle relish. Came out really, really good! Will absolutely make again!

Pumpkin Muffins with Streusel Topping

Oh my! Just a few things, as noted in the other reviews and I feel the same way...double the raisins, use the whole 15oz can of pumpkin, and you MUST double the streusel topping! I ended up with 24 muffins, but I suppose it depends on the size of your muffin cups. I filled my cups almost to the top, leaving only enough room for the topping and they came out looking great. These really are fabulous muffins!

Smoky Sausage Penne

While I was waiting for the oven to preheat and the pasta to cook, I decided to brown up the smoked sausage in a skillet with some onion and garlic-it was a nice touch, both for the look of the sausage and the flavor additions of the onions and garlic. When stirring in the cheese, I felt the need to add more and am glad I did. Other than that, this would be better with fire roasted diced tomatoes instead of plain.

Award Winning Soft Chocolate Chip Cookies

Make these and expect to be complimented! I follow the advice in the review of SVROSS and add 2 t baking powder, 1/2 t salt, and 2TBSP vanilla. You really need the extra vanilla to make these 5* cookies. Once they cook, they stay perfectly soft! They aren't greasy or crispy or spread all over the bake sheet. I skip the nuts and use 24 oz of morsels. Fantastic! MMMmmm!

Italian Tomato Cucumber Salad

Five stars with white balsamic (four without-I LOVE vinegar, and it adds just the right finishing touch). I used more onion and cuke as well. Tasty, easy, simple salad. Highly recommend it. If you don't have fresh herbs available, dried Italian seasoning works fine too.
