Johnsonville Italian Meatballs

These were OK, we just prefer our meatballs to be not all sausage. I think a blend of sausage and another meat would be much better for our preferences. Must add garlic though, regardless!

Peanut Noodles

I threw matchstick carrots and mini broccoli florets in with the noodles as they cooked to add some veggies to this. The sauce tasted fantastic in the pan, though I did add things to taste. Then when I mixed the noodles in, the flavors disappeared into the noodles :( Too bad, because it looked great garnished with the green onion tops and black sesame seeds.

Baked Fettucheesy

This is pretty good with a few touches. I wish I could give 3.5 stars, but since it's an easy fix I'll round it up to 4. First, as others stated, there is hardly enough sauce and it seems rather dry. Definitely cover with foil and remove the foil for the last few minutes to brown the cheese on top, and either use less pasta or make a little more sauce. I also added garlic, sliced mushrooms, and frozen peas. I served with sauteed chicken and a green salad for a nice little dinner.

Sweet Tomato Meatballs

I give the meatballs a five, but the sauce a two. It was virtually flavorless and was in desperate need of salt and pepper. In hindsight, I bet a little Worcestershire would have perked up the sauce a bit. The meatballs are something I will definitely make again though, they are yummers!

Trio of Mashed Roots (Parsnip, Turnip and Carrot)

Very good except the nutmeg was too prominent and I think my turnip was too small (halved the recipe) because it seemed to have gotten lost. I remember often having carrot and turnip mash when I was young, so it was a little nostalgic for me to make this stepped-up version. Will make again, with minor adjustments.

Amazing Greek Chicken Casserole

I'll have to give this a 3 because it doesn't call for any salt and pepper and it needed it. I also made my own cream of mushroom, which I think tastes worlds better than the stuff from a can. I think it would be better with some sauteed veggies in the mix. Maybe onion, red bell pepper, perhaps some throw in some olives.

Stovetop Butternut Squash and Chicken Stew with Quinoa

I just cut my chicken into pieces from the get go. I found that when the 20 minutes was up, there was still far too much liquid left so I cooked quite a bit off. The apple had totally disappeared in the dish; I think it disintegrated during the 20 minutes. I really had to adjust the seasonings. It needed more salt, pepper, garam masala. I think this was a nice way to use up both the leftover squash I had in the fridge and the apple sausage links that I had in the freezer.

Mona's Easy Refrigerator Pickles

These were pretty good, but even better on the 4th day, when I polished off the small batch I made! Loved how the cuke and onion were soft yet crunchy. I think a little mustard seed would be a nice addition, I'll give it a try next time. Will for sure make again, thanks!

Make Ahead Peanut Butter Cookies

These are a pretty good cookie! Not too sweet, but I used natural peanut butter, not one with sugar in it. These cookies are nice and soft and stay that way. I also used butter, not shortening because I never keep shortening around. Super easy when you've got the make-ahead mix ready to go! Will make again!

Cheese Dipping Sauce

This was alright. I used sharp cheddar; I think it would not have that great of a flavor with regular cheddar. It still seemed to be missing something so I added a touch of cayenne pepper and ended up adding some green chilies after dipping a few chips (thanks to Baking Nana for the green chili idea). After the additions, hubby kept diving in for more.

Make Ahead Almond Butter Sticks

Pretty tasty little treat! The dough is not something you can really roll out, so I patted mine pretty thin using my hands. The directions do not say when to use the almonds, so I sprinkled some in with the sugar filling and the rest on the top layer prior to baking. These taste like an almond shortbread with subtle almond flavor.

Make Ahead Cookie Mix

Very easy to use. I'm not sure how it fares in the fridge for up to 4 weeks though, as I used the batch I made the same day. I made several of the other "Make Ahead" recipes, and most of them turned out just great. Making the mix and then using it for several of the different cookie recipes sure makes it easy to bake a few different types of cookies easily-would be a huge help at the holidays!

Zu's Fried Apple Pies

Yummy little hand pies! I added a little cinnamon to the dough as others did, and I used apple pie spice (made from this site) instead of just cinnamon. As soon as I pulled them from the oil, I sprinkled them with turbinado sugar. They were certainly ready before an hour's time, making them a fast little treat when you want apple pie. I scaled the recipe down for my husband and I, which is nice because the 2 of us couldn't eat a whole baked apple pie. Would make again!

It flattens into a standard cookie as it cooks and is nutty, chewy, and has a caramel/toffee flavor. It's ok, but not the "buttery cookie" you would expect, as described.

These are interesting. Puffy with lots of spices, a bit on the moist side-probably from using chunky applesauce. My husband didn't seem to care much for them though.

Make Ahead Cherry Winks

This were lovely! I skipped the nuts because my husband isn't a huge fan and I put nuts in the other "Make Ahead" recipes, so I figured I'd give him a break on this one. These would be really nice on a holiday cookie tray, very pretty. So easy when you have a batch of the "Make Ahead Mix" already prepared!

Pecan Caramel Ice Cream

Too sweet, the condensed milk taste is rather strong, and the texture just isn't right. I made this in my counter-top ice cream maker and after the churn cycle, it was still rather runny so I put it in the freezer to set. After 7 hours, it still did not have a good ice cream consistency. I think we will probably be throwing the rest of this out because it's syrupy tasting and not creamy. I make ice cream quite often, but this is one recipe I will not be using again, sorry.

My Favorite Stuffed Green Peppers

This needed just a hint of help to be 4 stars as it was lacking some flavor, so I'll give it the four because it IS better than a three star recipe and it's easy to fix. The issues are not enough tomato flavor, which is easily fixed my adding some tomato paste, and it needed and herb of some sort so I felt oregano would work well. Other than that, I used red bell pepper as a preference and chopped the top and cooked it with the onion. The directions don't say when to add the garlic, so I added it when the onions started to turn translucent. I'm not a big spicy person so I used less cayenne, and instead of mozzarella, I thought using Mexican cheese blend went better. I liked really the outcome with these changes!
