Fresh Pear Pie

1/2 Cup of sugar = WAAAAAAAAY too much. Pears are nice sweet so just a couple of tablespoons was perfect, almost too sweet even. I would've had to have thrown the whole pie out if I used 1/2 cup!

Refried Beans Without the Refry

Ronaldo's Beef Carnitas

Very good! I skipped the foil and threw it in the crock pot. I used a 2 lb pork roast, kept everything else the same and added 1/2 cup of water, onions, garlic,and red bell pepper. After 8 or so hours on low, shred the meat, mix it with the liquid in the pot to redistribute flavors, then broil until dry to your liking. Flavorful and yummy carnitas! Thank you!

Easy and yummy. I skipped the zest and only added a little lemon flavor. Also, I made a fruit sauce topping that was tasty over the top. Will use this recipe again!

Autumn Apple Onion Pork Chops

I'd rate 3.5 if we could give half-stars. The thing is, if you were to use the full amount of rosemary and thyme, I don't think you'd be able to eat it! I used 1 tsp rosemary and just 1/2 tsp thyme and it was just right for me. Other than that, this was a nice dish. I even forgot the brown sugar and didn't miss it. I think it would also be good with white wine as opposed to the apple cider vinegar. It didn't say to, but I used more oil when I added the pork to the skillet. I used thin sliced pork loin, because that's what I had, and cooked it just a few minutes per side. Would make again.

Beefy Sweet Potato Hash

Grilled Steak and Asian Noodle Salad

I had never cooked steak before. That's right, never. I haven't been much of a read meat eater since my early teens, so literally for more than half my life. For someone that has never cooked steak before, I was not happy that it came out dry so I couldn't really enjoy the steak! I cooked 16 minutes on my gas grill over medium heat, covered, as indicated and there is no way this steak was of medium doneness; definitely well done. The marinade itself had great flavor and I marinated for 2 hours. I did make my own yummy Asian sesame ginger vinaigrette. I also added celery to the veg. I wish I had taken the advice of reviewer Bibi, who omitted the sugar snap peas and used snow peas; the sugar snaps were a little too sweet for the dish. I would try this again, swapping the peas and ensuring the steak was not over-cooked.

HERDEZ® Red Guajillo Chile Chicken Tortilla Soup

Tasty! I also had rotisserie chicken, leftover from last nights dinner. I didn't have V-8 so I used a blob of tomato paste and added lots of extra liquid because I also threw in some rice. I tailored a few other things based on what was in my kitchen (organic frozen corn, a spoonful of organic chicken base), and added cumin and S&P as suggested in the note. I forgot we used the last of the tortillas the other day, so I garnished with a little sour cream, cheese, chopped cilantro, and avocado. Very yummy.

Mexican Chocolate/Salted Caramel Cake in a Mug

I would give this 3.5 if there was a half-star rating, so I'll give it 4 because it IS better than 3. I liked the flavors of this, but it was rather dense and the caramels stuck to the fork and my teeth (I used Brachs). Also, the inside of the cake tested done with a toothpick but the edges were rather wet and gooey looking. I recommend using a BIG mug, maybe 10oz or more; I used an 8 oz ramekin and the batter overflowed while cooking. Overall enjoyed the hint of spice and was nice topped off with a little ganache.

Tonkatsu / Katsu Sauce

This sauce tasted primarily of Worcestershire sauce. Perhaps if you add the Worcestershire in increments, tasting as you go, you will find the right blend, but we thought it was just OK as written.

Vanilla Ice Cream V

This was very good, very easy, but not as creamy as the recipe I usually use. Changing the ratio of cream to half & half would make it creamier. My ice cream maker doesn't make a gallon of ice cream so I reduced the recipe for 1 1/2 qts. I dissolved the sugar in some warmed half & half because I was afraid it might be a bit grainy, and I also added a cup of chopped strawberries-yum! I like that this recipe doesn't use eggs or canned sweetened condensed milk.

HERDEZ® Creamy Tomatillo Avocado Salsa

OK, so I didn't follow the recipe exactly...I used sour cream, not yogurt (already had sour cream in the fridge), and I added the sauce in increments so it wouldn't be too spicy for me and wound up using about half the jar. My husband and father-in-law really enjoyed this! Nice change over the usual guacamole.

Grilled Onions

These were pretty good but I think I would give it 5* with beef bouillon instead of chicken. I used smaller onions and did one per person, serving them whole. FYI: The thing about serving them whole instead of cut up in the juice is that the centers were rather salty. My rating is not based on this though, since the recommendation is to cut them up.

BBQ Potatoes with Green Onions

These did not brown at all and could really benefit from some garlic. I sprinkled additional green onion and fresh parsley on at serving time. Just ok. Maybe would be better served with sour cream, bacon bits and cheese-wish I'd thought of that sooner.

Grilled Potatoes and Onion

I thought I was going to love this but it came out burnt to a crisp. I did keep it off the directly lit grill burners so I'm not sure what happened. I took a taste of a little piece that wasn't burned and it was sooooooo salty that even if it hadn't been burnt, we would not have been able to eat this anyhow. Such a shame.

Teriyaki Marinade II

Very good! I minced my garlic then crushed it with my knife blade. Marinated chicken for 4 hours before grilling it and it came out moist and flavorful. Served with sesame vegetables and purple jasmine rice.

Ham Bone Chowder

I found this to have a lot of broth; I like my chowders nice and thick. Next time I think I'd use less chicken stock. Maybe use cream instead of milk. And pureeing just one cup of the chowder didn't add very much body. Great flavor though. I wasn't sure about the cumin but it was tasty! I added my potatoes and carrots about 2 hours before we ate dinner and kept it on low.

Honey Baked Chicken

The chicken came out bland, and the sauce was runny and the curry flavor was not noticeable. To fix the sauce, I dumped it in a pot and thickened it with a slurry. I also added WAY more curry powder, as well as some red pepper flakes. Prior to cooking, the chicken should be seasoned with salt and pepper. Next time I think I will pound the chicken a little and cook it on the stovetop. My sauce came out delish after I tinkered with it a bit.

Quick Couscous with Raisins and Carrots

I really wanted to like this but it was terribly bland. Too bad, it looked fabulous. I recommend using all broth and no water, and it is in desperate need of salt and pepper.
