Mom's Best Pork Chops

Reviewed: Oct. 19, 2011
Tasty chops! Others had commented about seasoning not providing enough flavor, so I first coated my chops in flour with garlic salt, onion powder and white pepper, then dipped in egg and lastly crackers. After pan frying, I baked for only about 15 minutes then checked with my meat thermometer and the chops were moist and cooked perfectly. Hubby requested honey mustard to dip and that tasted pretty good with the chops. Will make these again!

Crescent Pizza Pockets

Reviewed: Oct. 4, 2011
I'll give these a 1 for being good in theory. First, you can't follow the directions to a T. If you fold rectangle dough diagonally over filling, the dough won't line up. Not a big deal, but just thought I'd mention it. Second, the dough is kind of a pain in the you-know-what to work with. Plus, I assembled them on a pastry mat and then transferred to a bake sheet but they wanted to tear apart. Third, the flavor of the crescent dough and pizza sauce just didn't go well together. Lastly, when you look at the market value of the crescent dough and pepperoni, these are kind of an expensive little snack, which my husband threw half of in the trash.

Mexican-Style Goulash

Reviewed: Sep. 28, 2011
I thought this needed some help. I tasted it before serving and it had no flavor! I stirred in more oregano and chili powder. Should've added garlic to the onion. I also felt it could've used more macaroni. Would be very good with a few improvements.

Navy Beans and Greens with Bacon and Garlic

Reviewed: Sep. 26, 2011
Pretty good. I took a few bites before I realized I forgot the lemon, so I squeezed it on. The lemon really adds dynamic to the dish. I thickened the dish up with some flour and served it like a stew.

Farfalle with Ham and Peas

Reviewed: Sep. 23, 2011
I started by sauteing some chopped garlic in butter before adding the milk and remaining ingredients. Used white cheddar and Parmesan cheeses. When the sauce was done, I spooned it over the pasta. I thought this was a good way to use the rest of a ham steak from the previous night's dinner, but my husband didn't agree. Some people don't like ham and peas I guess!

Carole's Sesame Chicken Salad

Reviewed: Sep. 23, 2011
I made some minor adjustments and the final product was very tasty! I used broccoli slaw mix (because I like it!), brown sugar instead of white, added some celery, some sliced almonds, and a few shakes of rice vinegar. I also only added enough mayo to mix the salad together. Served on a bed of greens garnished with mandarin orange segments and crispy fried rice noodles. YUM!

Hidden Valley Ranch Smashed Potatoes

Reviewed: Sep. 21, 2011
If you like ranch and mashed potatoes, these are for you. My husband said he'd give them 9/10, but we can't give half stars. I boiled my potatoes in chicken stock instead of microwaving them. Also used sour cream plus a little water instead of milk (ran out). These were quite good, but I'm still stuck on creamy garlic mashed 'taters.

Iced Coffee Syrup

Reviewed: Sep. 20, 2011
This was good but not great. I grew up in New England and this drink reminded me of coffee milk from when I was a kid; it was a caramel-colored syrup, in a bottle like chocolate syrup, that you stirred into milk. If I wanted coffee milk, I would give this 5 stars, but I feel it didn't taste like a regular iced coffee.

Bacon Wrapped Stuffed Mushrooms

Reviewed: Sep. 17, 2011
YUMMERS! I used less cream cheese and added chopped garlic and pine nuts, though roasted garlic would be better I think. My husband said I need to add these to the regular rotation! I like GUYCHEF's tip about baking on a rack to keep away from bacon grease. DO give these a try!

Out of this World Pasta Salad

Reviewed: Sep. 17, 2011
This is rather versatile. I didn't find it necessary to cut the shapes and I only had red of the bell peppers. I did add the black olives, and also green onion and halved cherry tomatoes. I think all those peppers would have been way too much! I used regular broccoli as I couldn't find Romanesco, and used veggie rice spirals in place of the wheat pasta. I had to use a bit more dressing than called for b/c after the 2 hours in the fridge it was a little dry. Also perked it up with freshly cracked pepper. It's a good once-in-a-while change from classic pasta salad, or good when you don't have time to make a mayo-dressing of your own. I would give it 3.5 if we could give fractions. This might be good with crumbled bacon...hmm...

Kelli's Fried Green Zucchini

Reviewed: Sep. 8, 2011
I coated the zucchini in flour seasoned with garlic salt and onion powder, then dipped in egg/milk, and finally coated with fresh-made breadcrumbs and Italian seasonings. A very tasty way to use up some of that surplus of summer squash. Mmm!

White Cheddar Macaroni with Bacon and Thyme

Reviewed: Aug. 30, 2011
Had bacon to use and found this recipe. I chose this over the other bacon mac recipes because the onions are fried in the bacon fat, which makes sense to me, especially if you want to add more bacon flavor aside from the crumbled bacon itself. Came out rather good! I think it might also be good with smoked cheese and sun-dried tomatoes.

Classic Macaroni Salad

Reviewed: Aug. 28, 2011
I usually shy away from macaroni salad because it is often bland or just tastes like mayo. Not the case here! I did cut the sugar in half though and it was plenty sweet. I used white ground pepper as opposed to black and yellow bell pepper, not green (what I had in the fridge). I did add the grated carrot and put relish in place of the pimento. I made the dressing the night before and mixed it with the cooked macaroni the day of my BBQ. It was a hit! Thanks for the recipe!

Cherry Glazed Salmon

Reviewed: Aug. 26, 2011
I actually would like to rate this 3.5 stars. The cherry glaze had a very subtle taste. I added a little shallot to it and increased the honey but it still didn't pop. I had to use Ahi tuna because the market was out of salmon, but I didn't allow a difference in fish to affect my rating. Not sure how else to make it better, but an improved glaze would be tasty on fish and pork.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Reviewed: Aug. 21, 2011
As a personal preference, I will use Bourbon Whiskey BBQ Sauce by Kevin next time, as it really is #1 in my book. This method is the way to go though. I also added paprika and garlic and onion powders to the dry rub. These were a big hit! YUM!

Raspberry Cup Cakes

Reviewed: Aug. 21, 2011
These are tasty little treats and not very hard to make. I thought I had frozen mixed berries, but turns out it was just dark cherries so I used those. They were a bit tart so I added some sugar. I think the filling could've used a little bit more cream cheese flavor, but it was too late when I tasted it to add more. Over all, these are very good and versatile with the fruit you want to use. Next time (WILL make again!) I will increase the cream cheese though.

Best Burger Sauce

Reviewed: Aug. 19, 2011
Sorry. Maybe it's because it's been compared to McDonalds and we don't eat fast food, but this was not enjoyed at my house. My husband said it tasted like Thousand Island (which he dislikes) and I thought it tasted like a bunch of mixed condiments. It was worth a shot but we'll top our burgers with condiments individually next time. I made a small batch and I'm glad I didn't make the full version.

Karli's Ultimate Trail Mix

Reviewed: Aug. 19, 2011
Very good mix of textures and sweet/salty. I didn't have walnuts so I threw in pistachios instead. DO NOT pass on the sesame sticks! I thought I would be missing chocolate but not really.

Very good snack, but I will leave out the marshmallows next time, their texture did not work for me in this.

Fettuccini Alfredo With Sausage

Reviewed: Aug. 18, 2011
I altered the recipe quite a bit so my review reflects the actual outcome. The texture of sausage removed from the casing sounded like it would be odd to me so I sliced the sausage instead. I also added garlic to the Alfredo sauce and used Parmesan for the cheese. I added freshly ground white pepper too. Hubby doesn't care for Alfredo and gobbled this up!
