Black Bean Rice Burgers

We thought the flavors were fine, though I added garlic and taco seasoning. The issue was the consistency. Maybe the salsa was too saucy or something because we were unable to form patties, just had to drop it into the pan because it was rather runny, and it was hard to flip with a mushy texture inside once crisp and browned on the outside. Will perhaps try again.

Garlic Chicken Fried Chicken

I do not understand all the reviews complaining that chicken can't be fried in 15 minutes. This recipe is for chicken fried chicken, which means a thin cut of meat, breaded or battered then fried, and these ingredients clearly state "skinless, boneless chicken breast halves - pounded thin." My own chicken was done in maybe 7 minutes, though I did I don't have an electric skillet so I used a deep, heavy bottomed pan on the stove and my trusty thermometer. I did s&p the chicken directly, then coated in the seasoned flour, dipped it in the egg mix, then into the flour again. I had also followed the note from the submitter stating the garlic powder was meant to be T, not t. This came out flavorful, crispy on the outside, tender moist chicken on the inside, a big "winner, winner chicken dinner!"

Dark Chocolate Brownies with Caramel Filled DelightFulls™

Whipped Banana "Ice Cream"

As mom to a toddler, this is practically a perfect recipe! It's one ingredient, and takes just minutes! Whipped it up with the processor attachment for my stick blender. I almost always have bananas in the freezer anyhow because my tot eats just half with her breakfast. She loved having "Banana Swirl" just like on her favorite show, Daniel Tiger's Neighborhood! I love that she gets 'ice cream' with only natural fruit sugars. Win-win!

Chewy Caramel

I followed the directions to a T. The temperature specified made for too soft of a caramel; they do not hold shape at all. Also, the biggest reason for my rating is that the flavor of the condensed milk stood WAY out and they are wicked sweet. These taste just like brown sugar stirred into sweetened condensed milk. I love caramels and sweets, but this recipe isn't for me, sorry.

English Muffin Bread

Easy and wonderful! Was such a huge hit when I made it for a brunch, I had to make more for just us! I halved the recipe and baked it divided between 2 mini-loaf pans. Forget buying over-priced packages of muffins at the store, this recipe is easy, will save you money, and please your taste buds and belly!

Sopapilla Cheesecake Pie

This is incredibly easy to make and was well-liked in my house. I don't have ANY of the complaints that the Most Critical Review entails; not super sweet, no butter puddles, cream cheese texture was just fine. Will definitely make this again!

Green Tea Shortbread Cookies

I had a hard time getting the dough to stick together. It seemed rather dry and crumbly, and I had to press it together to get the dough to stick to itself. I couldn't roll it out, or roll it into balls, so I shaped small walnut-sized balls as best I could, rolled in sugar, then flattened on the baking sheet. Other than that, tastes like I expected it would: buttery with the flavor of green tea.

Salted Caramel and Toasted Pecan Truffles

HI, recipe submitter here. I wanted to leave a tip in response to the first reviewer because I think perhaps the caramel may have been cooked too long because I've never had to wait 30 minutes for it to calm when adding the cream; maybe cooked to a different candy stage. My centers are rather soft and chocolatey, with caramel flavor peaking through. I must admit, mine don't always come out as nice as they did in my picture posted here, lol. Working with candy can be a trial-and-error process, I've had my share of fails and still do fail more often than I'd care to admit ;) I do hope you'll give this another try as they're yummy and I just want to share them!

Wheat Germ Whole-Wheat Buttermilk Pancakes

My toddler and I love these! My husband, not so much. They do have a graininess to them, but that comes with wheat flour and wheat germ. We make them when he's at work now, lol. Our tot enjoys these with peanut butter and banana slices in lieu of butter/syrup.

Frosted Banana Bars

Wowza! I'm not really a cake fan, but these were a winner at our house! I cut the recipe in half and used an 8x8. I used Greek yogurt, not sour cream, and made my own cream cheese frosting. Move over, banana quick bread, there's a new 'naner in town!

Slow Cooker Texas Pulled Pork

This method makes WONDERFUL pulled pork sandwiches!!! I DO cut the vinegar down a little, and the BBQ sauce recipe I use is Big Al's K.C. Bar-B-Q Sauce. I make a batch of that sauce, use some for the pork, serve some hot on the side for the sandwiches, and then freeze the rest for another time. Even my husband's 94 year old grandpa said this was the best pulled pork he'd ever had and asked me for the recipe for this and the sauce too! :D

Braised Corned Beef Brisket

This recipe made the best corned beef sandwiches ever! I only made 2 little changes: an extra tablespoon of water because we live at higher elevation and I wanted to be sure it would be OK, and I twisted the peppergrinder over the brisket a few times before adding the onions and garlic. I used my dutch oven because I figured the lid would help keep the foil down tightly. Thanks MauiGirl, this is a "must-try -> keeper" recipe!

Creamy Au Gratin Potatoes

I've made this a few times now, and I have to say it is pretty bland as written. I decided to make it again the other night and it came out FANTASTIC! We had company over, and everyone, including our toddler, loved it! BUT...I made a TON of changes. However, I will follow my changes from hereon out whenever I make these! Here's what I did if you want to give it a whirl: Sauteed chopped onion and a little minced garlic in 1 TBS or so of butter for a few minutes until the onion began to soften. Added the remaining butter, melted it, then continued step 3 buy adding the flour and so on. For the cheese, I used a blend of SHARP cheddar and a shredded parmesan/romano/asiago blend, adding more cheese than called for. I layered a little sauce in the bottom of the dish, then a layer of potato slices (I like to make them thinner than 1/4", and boil them for 5minutes first, then I don't have to bake them as long), spread another layer of cheese, and so on. I also made a panko/melted butter topping and added that at the last few minutes of baking, uncovered. YUUUUUUUUMMMMMMMMMMMMM!!!

Irresistible Irish Soda Bread

I usually follow a different recipe for Irish Soda Bread, but decided to try this one since it was in the Feb/Mar '15 AR magazine. I was unsure how I'd like it since egg is not traditionally in Irish soda bread. Maybe it's because I live at a slight elevation (~3400') and the egg helped it not get as dry and crumbly as the other recipe, but the texture of this was FABULOUS! Of course, I added a heaping cup of currants as well as some caraway seeds. Delish smeared with Kerrygold Irish butter. Will be making again for sure!

Chef John's Boston Baked Beans

Not Boston beans like I'm used to. The flavor was not bad, but the consistency was off. I increased the recipe by 50%, to 9 servings, but it was a TON of beans. I served it at a party with about 20 or so people but I was left with more than half of it. I usually love Chef John's recipes, but alas, we can't be on the same page all the time.

Crab Rangoon III

Needed some tweaks. Good advice I gathered from other reviews was to press as much liquid from the crabmeat. I also omitted the water chestnuts and added green onion. After making few rangoons, I decided to add a touch of soy sauce to the filling for umami flavor. I also added fresh minced garlic because the powder didn't lend enough flavor alone. I made a dipping sauce of soy sauce, garlic, ginger, brown sugar, water, rice vinegar and a few drops of sesame oil. Went very well together. Will for sure make and tweak again.

Chocolate Mint Crinkle Cookies

Mmmmmmm! Very good, but I think I would like them better if I doubled the mint extract. While the cookie dough smelled rather minty, the flavor baked up very subtle. I didn't have unsweetened chocolate, but I had unsweetened cocoa powder so I followed the guide on the cocoa to mix with oil as a chocolate replacement. I thought the chocolate flavor came out just right! These baked up to have a slightly crispy edge with a soft, puffy middle. Will make again and increase the mint.
