Chicken and Pasta Casserole with Mixed Vegetables

Reviewed: Sep. 20, 2013
After reading other reviews, I added probably a cup or cup and a half of organic cream to the casserole. Unfortunately I did not have mixed vegies on hand but got by just fine with broccoli. Also, I cut up a whole chicken (again because that is what was on hand) instead of just the chicken breasts. I made this for a crew of men that I feed everyday, and they thought it was great.

Hamburger Jazz

Reviewed: Sep. 5, 2013
I used wild rice instead of white. Worked great, but had to cook it a bit longer. Another reviewer added a little green bell pepper and worcestershire sauce so I tried that as well. Also, I used cheddar and Mexican Style cheese (didn't have motz on hand). The guys really liked it and went back for seconds.

Potato Klubb (Norwegian Potato Dumplings)

Reviewed: Aug. 17, 2013
Grew up on this (my dad was full Norwegain and mom was 3/4) living in North Dakota. We always made Klubb the day after having a ham dinner. Mom would save the ham bone for making Klubb; used it in the boiling water to give it flavor, and leftover ham was used to place inside the dumplings. It was served in a bowl with some of the broth and lots of butter, salt and pepper. Have never tried it with shredded pork, rutabagas, or onion, but that sounds like a good idea too. I eventually became vegetarian, so I make a separate batch just for me and of course skip the meat. For broth flavoring, I add butter, honey, and soy sauce or tamari to the water. Works just fine!

Skillet Ham, Cabbage and Potatoes

Reviewed: Aug. 9, 2013
Easy to make if you already have the cooked ham and a quick way to shred the cabbage. I fed it to 4 men today and they all commented about how good it was (more than once), even the one who doesn't care for cabbage liked it.

Would like to give this one more stars; all the guys LOVED it! I did add some oregano, basil, and fennel to the tomato sauce.

Cheesy Ham Potato Bake

Reviewed: Aug. 1, 2013
Made this as the main dish to feed 7 mean... not a good calculation on my part! The guys really liked it and ate it up, good thing I had slices of ham and parmesan buns to serve on the side. Also, instead of frozen hash browns, I grated 4 cups of potatoes and then it also required longer cooking time. At any rate, it was very good as is and I can that variations would also be easy.

Cauliflower Hamburger Casserole

Reviewed: Jul. 26, 2013
Even before I had a chance to ask, "So, how is it?", the guys were yelling from the dinning room, "Hey Jen! This is really good!" Pretty easy to make and easily adjusted to your own taste. I didn't have asparagus on hand so I substituted mushrooms. Can't wait to try it with asparagus too!

BBQ Sauerkraut Casserole

Reviewed: Jul. 23, 2013
Very easy to make and easy clean up after. I am vegetarian so did not try it. However most people I served it to liked it. One said "very good" as he took another big bite and nodded his head up and down, one said "yeah, pretty good" and finally one said "good flavor but a little dry, could use more sauce". So there you have it.
