Baked Penne and Smoked Sausage

My boyfriend and I thought this was a solid 4 casserole recipe. I did tweak it slightly by skipping the french-fried onions and adding spices (onion powder, garlic powder, pepper and a few red pepper flakes). I also added a bit more cheese than called for and used rotini instead of penne. The suggestion about stirring partly through the cooking time was a good idea. My boyfriend would like to add that more cheese is always better.

Monterey Ranch Bread

My boyfriend is not a huge ranch fan, so I only used 1/2 a cup of dressing. I also skipped the butter, as I figured we didn't need the extra calories. The four stars are based on taste - we did enjoy the cheesy ranch flavor. However, it needs to be baked for longer than 15 minutes to make sure the cheese melts. It might also be good to broil it for a few minutes at the end to get a nice crust on the topping. Finally, this feeds a lot more than 6 people!

Rosemary Ranch Chicken Kabobs

I made up this marinade as directed (except for a teaspoon of dried rosemary instead of fresh) and poured it over whole chicken breasts in a pyrex baking dish. After refrigerating for 30 minutes, I popped the whole thing in a 370 degree oven for 35 minutes. The chicken came out very moist and flavorful, and my boyfriend and I definitely enjoyed our dinner. I do, however, think that grilling the chicken would make it even better.

Scalloped Corn III

Granted, I only used one sleeve (about half) of whole wheat Ritz crackers, but my boyfriend and I just weren't overly impressed. It seemed to be missing something - garlic? Some other spice? Or maybe we just prefer a more sweet corn pudding to scalloped corn...

Baked Teriyaki Chicken

I served this to my boyfriend and two of our friends, along with rice and mixed veggies. (I made everything as stated in the recipe, except I used four large chicken breasts.) We all enjoyed the meal very much, especially the sauce. While we will certainly eat this meal again, I don't know that it'll make it into the regular rotation. Lining the pan with foil helped a lot with clean-up.

Slow Cooker Beef Stew I

My boyfriend and I thought this beef stew was only okay. I doubled the Worcestershire sauce and the garlic, and I'm glad I did. I also used celery salt instead of regular salt and added peas at the end instead of using celery. It just seemed to need a little something else...more Worcestershire? Red wine? Not sure. It was also pretty thick, but we were okay with that.

Garlic Lover's Chicken

This was an easy and yummy chicken recipe. I followed the advice of others and used garlic powder in my breading and added extra garlic to my "drizzle." I did not have fresh parsley, so I added some Italian seasoning to the breading, and I probably could have added a little more than I did. I decided to use olive oil instead of butter for the drizzle (some healthier fat!), which turned out pretty well! This is a forgiving and flexible recipe - it will definitely be repeated at my house!

Butterscotch Bread Pudding

I scaled down this recipe to fit in an 8x8 dish and used 2 eggs, an 8 oz loaf of bread and then half the rest of the custard ingredients. Oh, except I did keep the butterscotch chips at 1 cup :) I also added 1 tsp. of pumpkin pie spice, which was a great addition. This recipe is a great one to tweak to your own tastes, which I look forward to doing. My 8x8 pudding cooked for 70 minutes.

Slow Cooker Cranberry Roast

The ingredients of this roast struck me as kind of bizarre, but I thought I'd give it a whirl seeing as it got such great reviews. I was definitely not disappointed! I used a 2 1/2 pound Angus beef pot roast and it came out great. I just put it in the crock pot before I left for work in the morning, and it was done by the time I got home. I removed the meat and thickened the gravy with a little cornstarch, which worked perfectly. Served with mashed potatoes and mixed veggies. Yum!

Yummy and easy! I followed the recipe as is, with the exception of some ad lib measuring for the sugar, salt and vanilla. Especially great because the ingredients were already in my pantry!

Potato Salmon Patties

I'm giving this recipe the benefit of one additional star, as I think I am just not a fan of salmon patties. I followed the recipe exactly with the exception of using onion flakes instead of minced onion. If I were to make this again, I think I would use either onion powder or be sure to saute the onion (and definitely not a whole one!) until very soft - as the crunch of the onion did not appeal to me. I ate my patties with the "Lemon Sauce for Salmon Patties" and some roasted broccoli.

Awesome Ham Pasta Salad

I halved this recipe so I decided to use slightly different veggies (red and yellow peppers only) and onion powder instead of an onion. Even with these changes, this is a yummy pasta salad! The pickle juice definitely makes the dressing - don't leave it out! I can't wait to make a whole batch and to add some more veggies to it.

Caramel Apple Pork Chops

I followed (the seemingly logical) advice of other reviewers who chose to bake everything all together so that the pork chops would be able to soak in the sauce while cooking. I thought this would be especially important for my chops, as they were pretty thick. I put them in a pyrex dish, topped with the apples and poured the sauce over all. Baked it covered at 360 for an hour. I then poured off the sauce and apples into a small saucepan and boiled it down. The pork was good - it tasted mildly of cinnamon and was moist. The apples were also good - warm and spicy. I did not, however, get that over the top sweet and spicy effect I was looking for. Maybe it's my fault for not following the directions exactly, but I'm just not even excited enough to try it again.

Sweet Corn Muffins

Easy and delicious, lightly sweet muffin! I used butter instead of shortening, but otherwise baked as directed. My half batch easily made 7 muffins - after tasting I wish I'd made the whole batch!

Rosemary Lemon Grilled Chicken

I said 5 stars, my boyfriend said 4 with a potential for 5 if the chicken had been grilled. As it was, I made the recipe with olive oil instead of butter and 1-1.5 tbs of dried rosemary instead of fresh. I let it marinade all day while at work, and then baked it in the oven. Very moist and flavorful! We look forward to grilling it next time.

Fried Rice Restaurant Style

I enjoyed this recipe, but did cut a few corners and make some additions. I used instant rice (cooked in chicken stock) and frozen mixed veggies. Added some minced garlic to the pan with the veggies and also sprinkled in some ground ginger. I'll certainly make this again, and might try adding in some garlic powder instead of more minced garlic to give it some more flavor (I was afraid of burning the minced with the stir fry). The sesame oil is a great addition - don't leave it out! All in all this was a fast, easy and tasty recipe!

Roasted Garlic Lemon Broccoli

Great recipe! I spread my florets on a cookie sheet, drizzled with olive oil and sprinkled with Montreal steak seasoning. Tossed, roasted and then sprinkled with parm cheese before serving. Skipped the lemon. Yum!
