True Blue Custard Crunch Pie

Reviewed: Jul. 4, 2010
I took this to a 4th of July party and people raved about it. I followed the directions exactly except for the baking - mine took probably 15 min longer (10 longer for the first bake and then 5 longer for the topping). The only thing I'd do differently next time is make 2 pies!

No Time to Cook Chicken

Reviewed: Jun. 29, 2010
I would have given this a 3, but the fiance loved it so I'll give it a 4. I added seasoned salt, garlic powder, onion powder and pepper to the mix but still found it pretty unexciting. I'll put it in the rotation, but probably way at the back.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Reviewed: Jun. 29, 2010
Such a fun cupcake! Mine came out deliciously, in spite of two slight issues. First, I made up my 24 dough balls using ALL of the dough made in the recipe, and thought the balls seemed kind of large but continued on. Then, I filled my cupcakes slightly too full (since the balls were big) so I didn't have a full 24, but even will the filled-ness, the cookie dough wasn't completely covered. Solved that problem by covering the "dips" with icing and topping each with a mini chocolate chip cookie. I used a Devil's Food cake mix and Special Buttercream Frosting. I froze the dough for 24 hours and since they were on the larger side, I baked them for 19 minutes and they came out perfectly. Can't wait to show people tomorrow!

Special Buttercream Frosting

Reviewed: Jun. 29, 2010
Absolutely a great recipe! I did use butter instead of shortening and added a tad more cream, but really, you need look no further for a buttercream recipe!

Peachy Bread Pudding with Caramel Sauce

Reviewed: Jun. 20, 2010
Let me first say, I loved this bread pudding. However, I couldn't give it 5 stars because I really couldn't taste the peaches. Next time, I'll use more peaches or not chop them so finely. The caramel sauce was great on top!

Cafeteria Carrot Souffle

Reviewed: Jun. 20, 2010
Fiance said 5 stars, but I'm giving it 4 as I'm a non-carrot lover and it didn't really win me over. I used 3/4 a cup of brown sugar instead of white and added cinnamon. Next time I'll add the full cup of sugar and probably split between white and brown. I also took the advice of cooking it for an hour and it came out nicely. This would be a good Thanksgiving side dish.

Cheddar Baked Chicken

Reviewed: Jun. 20, 2010
To us, this just tasted like Shake 'n' Bake. And it probably could have used more cheese, maybe piled on the top in addition to mixed with the bread crumbs.

Mama's Asian Chicken and Rice

Reviewed: Jun. 16, 2010
This sauce was sweet and tangy. I didn't use the Chinese five spice but substituted cayenne pepper and ground ginger. It was still very enjoyable and I plan to put it on the menu in the future. My recommendation is to double the sauce and add some vegetables. I like broccoli but my fiance prefers snow peas.

Coffee Liqueur Bread Pudding with Caramel Sauce

Reviewed: Jun. 15, 2010
I made this recipe with 1 1/2 packages of hot dog buns (12 buns) and it came out well! I reduced the Kahlua to approx 2/3 a cup, but could hardly taste it in the finished product, so next time I'll use the full cup. My only complaint is that the pudding puffed a LOT while cooking and then fell quite a bit. Not sure if that's because I didn't use a water bath (I baked it at 350 for 80 minutes) or if others had this problem as well. Didn't affect the taste though - this was yummy!!

Boston Iced Tea

Reviewed: May 29, 2010
I made this tea as directed and enjoyed it. Next time, though, I think I might try a cran-apple concentrate for a little additional non-sugar sweetness.

Nancy's Chicken in Puff Pastry

Reviewed: May 28, 2010
I got this recipe from the puff pastry box. The only difference was that that recipe called for garlic and herb cheese spread, rather than flavored cream cheese. I cooked my chicken almost through, and then wrapped in the puff pastry. I plan on making this again, although next time I might try crescent roll dough instead.

Chicken Alfredo Pizza

Reviewed: May 26, 2010
Yummy! I did cheat and used the Pillsbury rolled pizza crust in the refrigerator section instead of making dough, and I prebaked it for 8 minutes before adding the toppings. Made the garlic butter in the microwave so I'd have one less thing going on the stove. Cut up the raw chicken breasts, added the seasonings and cooked in a skillet. Mixed the cheese sauce and chicken before putting on the crust and baked for an additional 8 minutes. The only thing I'd do differently next time is add some veggies - I was thinking red peppers for color!

Romanian Apple Cake

Reviewed: May 23, 2010
My fiance and I really liked this cake. It's nice and moist, and really easy to prepare! I used Golden Delicious apples and left out the walnuts for personal preference. I think next time I might add a little nutmeg for a tad more spice.

Sloppy Joes II

Reviewed: May 16, 2010
I made these for my fiance and I, and while we both liked them, they could have been a LITTLE more sloppy. We had our Joes on whole wheat buns with salad and macaroni and cheese on the side.

Pork Tenderloin with Herb Sauce

Reviewed: May 14, 2010
This recipe got five stars from my fiance and I, even though I forgot to leave time to marinate it! Instead, because I don't have a grill, I made up the sauce (using red wine vinegar and olive oil instead of butter) and poured it over the pork loins in a large loaf pan. This way the meat was pretty much covered by the sauce. I baked it at 370 for about 45 minutes and it came out great! Served with brown rice and veggies.

Zesty Slow Cooker Chicken Barbecue

Reviewed: May 2, 2010
I made this for my boyfriend and I for dinner tonight and we enjoyed it. I scaled it back for 4 chicken breast halves. The sauce wasn't quite thick enough, and I added a little cornstarch to try and thicken it up some. Next time I think I would do a spicier BBQ sauce and I'd put less in the crock pot to start. Served on whole wheat buns with salad.

Campbell's® Slow Cooker Hearty Beef and Bean Chili

Reviewed: Apr. 21, 2010
The name of this recipe describes it perfectly - definitely hearty, beefy and beany! If you like your chili this way, you'll like this recipe. I did add a bit of cayenne pepper to it to kick up the spice a little bit. Served with salad and Sweet Corn Bread (from this site).

McCormick® Stuffed French Toast

Reviewed: Apr. 10, 2010
I halved this recipe and made two "sandwiches" with apricot jam and two with raspberry. Also ended up using wheat bread because it was what was in the fridge. We really liked the wheat-raspberry combo, but the apricot got kind of lost in the wheat flavor, so if you're going to do apricot jam, definitely use a white bread. The nice thing about the wheat bread, though, was that it was nice and sturdy for soaking and flipping. Finally, I used regular cream cheese with a little milk to loosen it up to a "whipped" texture. All in all a yummy breakfast!

Coconut Bread Pudding

Other than using all packaged coconut instead of the packaged/fresh combo, I made this as directed and it was quite a hit for Easter brunch.

Quick Pickled Eggs and Beets

Reviewed: Apr. 4, 2010
Followed the recipe exactly, but opted out of the cinnamon, and they were yummy! Just as I expect pickled eggs to be. I took them to Easter and others enjoyed them as well. I made mine Friday night and let them sit until Sunday, stirring every once in a while to make sure they evenly purpled :)
