Tangy Poppy Seed Fruit Salad

I used two cans of mandarin oranges, a can of pineapple, two kiwis, two small packages of blueberries and a package of strawberries and maybe a cup of grapes. Given how much fruit I used, I figured I'd double the "dressing," but ended up with a little too much liquid. I think I could have left the liquids the same, but still used the full teaspoon of poppy seeds and been just fine. Even though it was a little liquidy in the bottom, everyone enjoyed it!

Italian Style Meatloaf I

We thought this was a good meatloaf, but the fiance said he thought it should taste more tomato saucy. I actually used tomato sauce instead of ketchup, but I guess it wasn't enough! Thanks for a nice change, but I don't think this will be our new "go to" meatloaf recipe.

New Orleans Corn Bisque with Smoked Sausage

This was a delicious and filling soup. I even used skim milk and thought it came out nice and creamy. The only change I made was to use kielbasa instead of regular smoked sausage.

Slow Cooker Ham

I used a 5 lb smoked picnic ham for this recipe. No idea if it was the brown sugar or the ham itself, but it turned out great! I probably should have blotted the ham a little more because the brown sugar didn't stick very well, but like I said, the end result was tasty.

Candy Cane Fudge

I made this fudge using one package of milk chocolate chips and one package of a combination of dark chocolate and mint chips. I still added a little peppermint extract too. It turned out pretty well and people seemed to enjoy it. The hardest part was smashing the candy canes - I used 24 regular sized candy canes and tried to smash them in a plastic bag with a rolling pin. Definitely didn't work very well because I was left with large-ish chunks. Next time I may try the food processor.

Ham and Cheese Breakfast Quiche

My fiance said this was a nice change from the usual dinner. I used less hash browns and baked the casserole in a 9x9 Pyrex dish. I would recommend seasoning the potatoes and egg mixture to your liking. I used salt, pepper, onion and garlic powder, but next time I will add some other herbs to up the flavor. I used the cream but don't think it's necessary. Baking time aside, this was a nice quick dinner. We had ours with a side of fruit cocktail :)

Cranberry Sauce Chicken II

My fiance really liked this dinner. I thought it was only OK. We took the advice of another reviewer and made the chicken in the crock pot. I used light Catalina dressing, the cranberry sauce and half the packet of soup mix. I was really nervous while it was cooking because I didn't think it smelled that great, but it came out tasting like BBQ chicken.

Super-Simple, Super-Spicy Mongolian Beef

This was so simple to throw together. I put it in the fridge to marinade overnight, and then served it with veggie fried rice for dinner. After reading the reviews about how spicy it was, I cut back the red pepper flakes to a teaspoon - next time I'm going to use the whole tablespoon because it was hardly spicy at all. Thanks for a tasty and easy dinner!!

Pumpkin Waffles with Apple Cider Syrup

Yummy! I didn't use quite 1 cup of pumpkin and I subbed canola oil for butter. Otherwise followed the directions and these were delish! It was a little time consuming to whip up the egg whites, but I think in the end it was worth it.

Tacos in Pasta Shells

This was a yummy dish! We used taco seasoning instead of chili powder and salt, but otherwise followed the recipe. Next time I think we'll skip the crushed chips - I don't know that they added a whole lot. We served this with Mexican-style rice and salad.

Banana Sour Cream Bread

I made this in a medium loaf pan and the rest in muffins. It tasted good, but the baking temp/time was way off for me. I think I'll stick with my Martha Stewart recipe for banana bread.

Slow Cooker Mashed Potatoes

I'd give these three stars, because I didn't think the taste was anything overly extraordinary, but the idea of putting the potatoes in the slow cooker was really helpful in terms of Thanksgiving kitchen logistics so I'm going to give it 4 stars.

Awesome Sausage, Apple and Cranberry Stuffing

I used three boxes of Jiffy cornbread baked in an 11x15 pan for my bread base, which worked great. I sauteed the onions, celery and sausage separately and then sprinkled the herbs on, and mixed in the craisins and apple. I baked my dressing for an hour at 350 and stirred it a few times throughout baking. I'd never done a dressing before, and wanted to do something different. I think everyone was pleasantly surprised and would eat it again.

Sesame Green Beans

I served these for Thanksgiving and people liked them. I used frozen (thawed) beans and tripled the recipe but it worked out just fine. Thanks for a simple but tasty way to make green beans!

Cranberry Bars

I served these as a Thanksgiving dessert this year, and everyone loved them. I took the advice of others and used a can of whole cranberry sauce instead of making my own. It probably could have gone a few minutes longer in the oven, but it was hard to judge if they were done or not because of the filling.

Noodles Riviera

We enjoyed this dinner - it was simple and satisfying. I did cheat and just used a jar of spaghetti sauce instead of the water/seasoning packet/tomato paste combo. Instead of doing the layers, I just mixed it all together and then baked it in the oven. I did add a little extra seasoning when browning the meat (some steak seasoning) and adding some garlic powder to the sour cream mixture.

Durbin Hotel Sugar Cream Pie

I'm going to go ahead and give this pie an extra star for subtlety. I did all my cooking over medium heat - no double boiler. I might have let it go a little too long because it was pretty custard-y before I even put it in the oven and it never really boiled or simmered. My fiance and I hemmed and hawed over it, but in the end decided it was pretty tasty.

Penne with Chicken and Pesto

This dinner came together easily and we enjoyed it. Didn't really knock our socks off, but it was quick. I made the chicken and sauce earlier in the day and then made the pasta closer to meal time.
