Creamy Broccoli Soup

Reviewed: Jan. 5, 2012
For how simple this recipe was, it was delicious! I skipped the onion for preference, but did add some onion and garlic powder with the salt and pepper. I also found my soup wasn't quite thick enough for me, so I added some cornstarch to thicken it up. Thanks for the recipe!

Oatmeal Butterscotch Cookies

Reviewed: Dec. 30, 2011
These are delicious! I made according to the directions, but my oven must not be hot enough, because even at 375 I baked them for 13 minutes. I used a small cookie scoop. Thanks for the recipe!

Sweet-n-Sour Kielbasa

Reviewed: Dec. 18, 2011
This couldn't have been more simple or more tasty! I did have to make some changes to the cooking time, as I wasn't watching the clock as closely as I should have been. I cooked covered on high for two hours, and then uncovered on high for one hour. I also used half the recommended pepper flakes and next time I might leave out the water. Thanks for the recipe!

Venice High School Cherry Butter Cookies

Reviewed: Dec. 12, 2011
I was disappointed in these cookies. Granted, I used almonds instead of walnuts, but really I didn't think the cookie had much cherry flavor. I even made a glaze from the maraschino juice (as someone had suggested) to try and give it some more cherry oomph, but I don't think it made much difference.

Chai Tea Mix

Reviewed: Dec. 10, 2011
Clearly the reviews on this recipe speak for itself. I make it as directed, adding the allspice but not the nutmeg or pepper. I also use 1.5 cups white sugar and 1 cup Splenda. I have made this several times, and once made the dreadful mistake of accidentally using vanilla caramel creamer instead of the french vanilla - yuck! So take my advice and make sure you grab the right bottle :) Hopefully the people I'm giving it to for Christmas will love it as much as I do!

Penne with Spicy Vodka Tomato Cream Sauce

Reviewed: Dec. 10, 2011
I'm giving this the 5 star benefit of the doubt, as my husband doesn't like sausage and I had to make it without. Because I didn't have the sausage flavor, my sauce was tasting kind of bland and I added Italian seasoning. I also eyeballed four "glugs" of vodka and added some more cream (to use up what we had). This made a yummy and easy peasy dinner - thanks!

Chicken with Chipotle

Reviewed: Dec. 5, 2011
My husband and I really enjoyed this meal. I modified a little bit by sauteeing sliced chicken breasts until they were browned, and then pouring on the sauce to let them simmer to done. The best thing about this dish, though, was the easy clean-up! We served our chicken over rice.

Aaahh! Potato Soup

Reviewed: Oct. 12, 2011
I modified this recipe a little bit, but I think it would have been good as is. I used two med. sized russet potatoes, a packet of diced ham and some shredded carrots as my "fillers" and used most of a carton of chicken stock plus some water as my base. At the end I stirred in half and half instead of heavy cream. Thanks for the recipe!!

S'more Brownies

Reviewed: Oct. 12, 2011
I used chocolate chips to top my brownies instead of milk chocolate bars, but otherwise followed the directions. These were really good, but the graham crackers got kind of soft after a while.

Bacon Wrapped Pork Medallions

Reviewed: Oct. 12, 2011
This was an easy and tasty recipe. I skipped the pre-browning the bacon step, and while it wasn't raw, it wasn't overly crispy either. Regardless, my pork turned out nice and moist!

All-Day Apple Butter

Reviewed: Oct. 12, 2011
Delicious! I used 1/2 peck of Jonathan apples for my apple butter, with 2 cups white sugar, 1 cup Splenda, 1/2 tsp cloves and 3 tsp cinnamon. I did have to let it cook for quite a while (4 hours) with the lid off for it to reduce, and it probably could still have gone a little longer. I then ran it through the blender for increased smoothness. I'll be making apple butter all the time now!

Kielbasa with Peppers and Potatoes

Reviewed: Oct. 2, 2011
I prepared this dish in the oven. I started the potatoes alone on a large baking sheet tossed with salt, pepper and olive oil. Roasted at 375 for 20 min. Meanwhile, I simmered the kielbasa for a few minutes on the stovetop, and then sliced it and the peppers. Finally I tossed everything together, seasoned with pepper, garlic powder and onion powder, and roasted for 20 more minutes. This worked well for us, and the hubby actually ate his peppers!

Chicken Rotini Stovetop Casserole

Reviewed: Sep. 23, 2011
My husband and I enjoyed this recipe, but thought it could use a little something more. I made as directed, with the exception of cooking the chicken with some chicken grill seasoning. Even so, it could have used more garlic, more herbs in the sauce, etc. A dash of red pepper flake might have been nice, too. I would say that the only thing that was excessive was the butter. That said, it was simple and we ate it :)

Dad's Hamburger Gravy

Reviewed: Sep. 19, 2011
This was tasty AND simple. I omitted the onions but added onion powder and garlic powder in addition to browning my meat with Montreal Steak Seasoning. I used skim milk (you'd never know!) and served over whole wheat Grands biscuits.

Chocolate Banana Bread Pudding

Reviewed: Aug. 16, 2011
I'm going to give this recipe the benefit of the doubt and give it 5 stars. I doubled the recipe (but only used 6 eggs) and baked it in a 9x13 pan at 350 for 60 minutes. The taste is good, but I think that doubling the recipe made too much liquid and it's a little goopy to me. Next time I'll reduce the milk too. It was a nice way to use up leftover bananas!

Snickerdoodle Cake I

Reviewed: Aug. 10, 2011
This cake was delish! I did make a few additions - some cinnamon and vanilla to the batter. I also tossed in a bag of cinnamon chips, as I have a bunch and figured it'd be a good way to use them up. Thanks for a great recipe!

Quinoa and Black Beans

Reviewed: Jul. 20, 2011
This was a really simple and tasty dish! I used a red pepper instead of onion, used only 1 can of black beans and 1 can of whole kernel corn. I'd never cooked quinoa before, but I'd consider this first attempt quite a success!

Modenese Pork Chops

Reviewed: Jul. 18, 2011
I very much enjoyed this recipe, but found it to be kind of salty (even with using only 1/4 to 1/2 of a tsp). I doubled the wine and rosemary, and also added in a little onion powder. Thickened it up with a little cornstarch at the end. Thanks for a simple and tasty dish!

Extra Easy Hummus

Reviewed: Jul. 15, 2011
This is so tasty, simple and CHEAP compared to store-bought hummus. I used the first reviewer's suggestion about sesame oil, and then halved the cumin and doubled the garlic for my own taste. Thanks for a healthy recipe!!

Peanut Butter French Toast

Reviewed: Jul. 3, 2011
This made tasty french toast, although we didn't find it to be OVERLY peanut buttery. That might be due to the fact that we used wheat bread, though. It might come through more with regular white bread.
