Miss Betty's Super Quick Dinner Rolls

Quick & Simple!! :-) To make self rising flour: 1 cup flour, 1 1/2 tsp baking powder, 1/2 tsp salt. I used butter & not mayonnaise, Im out of mayo for some reason & its my favorite condiment. I substituted butter & it turned out great but a little salty, I have to try it with mayo too though. I'm making more now, minus the salt & dont forget to roll them or they turn out clumpy, there is no scooping involved.

Curried Tofu Salad

I made the sauce exactly as written. I didn't have any of the other ingredients except the carrots & tofu. I was just trying to figure out how to cook my tofu & get rid of some carrots, instead of cooking tofu the way I always do. The sauce was really good over the baked tofu & shredded carrots. I'll have to add other ingredients next time I make this. I baked the tofu 10 minutes longer to make it a bit crunchy.

Simple Roasted Chickpea Snack

I doubled this recipe & instead of using a can of chick peas. I boiled dry chick peas & dried them. I was snacking on them just like that & really enjoying them. I cooked these exactly as written & they were crunchy how a lot of people wanted. I really didnt like them with the seasoning or crunchy. Im missing my raw cooked chick peas :-( Hopefully my husband likes them roasted, cause he wouldnt touch them raw cooked. I think these would be really good with wasabi powder, but not roasted.

Grandma's English Muffin Bread

I made this with out a bread maker. Mixed all the dry ingredients - except the yeast. Mixed the milk & water in a small bowl & put it in the micro for 2 minutes, put the yeast in & let that sit for about 10 minutes. Then put the yeast mixture in the dry ingredients & mixed it with a spoon & then with my hands. I covered it & let it rise for 1 hour. This dough was really fluffy. I do eventually want to try this in a coffee can, but I rolled it out & it made it 6 english muffins to my suprise & I made the rest of the dough into a loaf. Let everything rise some more while the oven pre heated. Put them in the oven at 400° for 8 minutes & flipped for 6 minutes. & well that was too much time for the muffins. I left the loaf in for 5 more minutes. These were really fluffy & I got the crevases in the bread, but it lacks the english muffin flavor. I have made the recipe called English Muffins countless times & although Ive never gotten the crevases, its got that good flavor of english muffins. I think I will try adding a bit of baking powder to my go to english muffin recipe & maybe get those crevases we're shooting for. I love the texture of these though. After making this recipe, I give them each a 4. & I dont have time to change the other review so Im giving a 5.

Creamed Eggs on Toast

I never had this before, it was really good, kinda a twist on egg salad. I liked the chicken bouillon in it. I think I already memorized the recipe I liked this so much.

Sweet Pea and Noodle Salad

This was so good that I couldn't put it down to write a review till I finished my whole bowl. I only had spiral noodles on hand, but will make this again with shell pasta & make a "green pearl pasta" sounds so cute! I used chopped red bell pepper cause I love them. Didnt have any onion so I used some dashes of dried onion flakes. Some more dashes of chilli powder, cause I like chilli powder in dishes that use mayo. Omitted the hot pepper sauce. Some salt & pepper. Also only used 8 oz of noodles & a little over 10 oz sweet peas, I liked that ratio, it would have been too much noodles had I used 12 oz. I would love to try this with cooked ham sliced in tiny cubes the size of the peas.

Amazing Slow Cooker Chocolate Cake

This cake is addicting, It's in the crock pot for the 3rd time this week. It's fluffy & moist, so delicious. Today I added 1 cup of crushed walnuts to make it a bit healthier & Im craving walnuts. Also used 3/4 wheat flour. Would have used apple sauce for veggi oil but none on hand. I am completely addicted to this cake, the recipe written as is & also the healthy version. I used 3/4 wheat flour the 2nd time I made this & I couldn't tell the difference.

Dad's Simple Steak Marinade

I used this as a base recipe. Replaced veggi oil with olive oil, red wine with beef broth. Omitted the garlic. Added a dash of garlic powder, onion powder, celery salt & lemon pepper. We'll see how it comes out tomarrow. I really cant rate it cause I changed it so much. The recipe sounds great & I will have to try it as is sometime. I didn't have red wine & really didnt want to chop garlic right before going to sleep & I dont like veggi oil with meat, just tastes weird to me. I already have this recipe memorized though.

Carrot Cake Cookies

This was my first attempt at making any type of carrot cake or cookies & I'm making these for everyone for Easter. These tasted like cake because they're so fluffy & soft, but are a cookies. I made a lot of changes because I didn't have a lot of the ingredients plus personal preference & I've always thought the pineapple in all the carrot cake recipes was weird so I never tried. Here are my changes, I 1/2 the recipes because I never make a full batch the 1st time I make anything. I omitted the pineapple, raisins, nuts. Added 1 cup carrots & snuck in 1/4 of sweetened shredded coconut I love coconut but others dont, also added 1/8 nutmeg. 1 cup reg flour, 1/2 cup wheat flour. All butter, no shortening. & everything else the same for the cookie dough. Frosting I created my own & used confectioners sugar, I slowly added heavy whipping cream & a dash of vanilla. I frosted the tops of all the cookies & I absolutely looooved these. I know I cant rate the recipe off of my changes, but thank you for the recipe & thanks to the4taals because without that review I'd have been lost with too many carrots on my hands.

BLT Pasta Salad

This was good but the recipe calls for 2 tomatoes & I used 7 roma tomatoes. An entire onion was waay too much, I used less than 1/2 but I probably wont put any next time I make this, it tasted too much of onion. I made some ranch dip mix & used about 1 1/2 cups. The crumbling the bacon was a pain & I might use precooked bacon bits next time. I did the crumbling over each serving, the problem with that is everyone wants to eat the bacon, without the salad. I tried mixing some in a single serving & stuck it in the fridge over night, I dont see why the recipe doesn't just call for the bacon to be mixed in it. I also added cabbage, but I really want to try this with cucumbers & olive, no cabbage.

Peppermint Lace Cookies

I really loved these cookies. It alarmed me though when I first starting preping them that there's so much butter, I will cut back the butter by 1/2 & I think maybe get the same results. These are really yummy though, I made some to give to the leasing office tomarrow for Christmas Eve, I ate 8 to myself when they came out the oven. You dont need to keep them 3 inches apart though, 1 inch is enough room. There's no baking powder or soda they dont rise, they stay the same size as you plop them on there. I did 1 cup white flour & 1/4 cup wheat flour to make them healthier & no one can tell :-) Wonderful Christmas cookie I will make these years to come I love them.

Chicken and Red Bell Pepper Salad Sandwiches

I love this. I have been craving red bell peppers & I've always loved canned chicken instead of tuna. So I used canned chicken. This was fabulous, add bell peppers & heavy whipping cream to my regular sandwich :))))) awesome. Chili powder is good also, but the red bell peppers tops that. Im going to try it in a tortilla with some cabbage, going a bit along with another review only I dont have lettuce. Yaaay I love it.

Gingerbread Whoopie Pies

The gingerbread didnt rise. I used a scoop & these were 2x the size they should be. The filling was too liquidy & I tried to save it with more powdered sugar but I didn't want to use the rest of my powdered sugar. It was some what better after sticking it in the fridge for a bit. These were a disaster & no one ate a complete cookie but me. Everyone took a few bites & didn't like them, lucky to my sweet tooth I ate the entire batch. I'm going to try another gingerbread recipe & frosting, I'll stay away from gingerbread whoopie pies. I didn't read till later to weigh the flour & it would have been an option but I'll pass, thanks anyway.

Cream-Braised Brussels Sprouts

These were really good. I made them with frozen brussel sprouts. Next time I wont let the heavy whipping cream reduce so much, or put more. I really liked the sauce. I added pepper when I put them in the butter & with the salt. Where there's lemon, there needs to be pepper. I will make these again.

Kyle's Favorite Beef Stew

I will cut back by 1/2 of the onion soup mix. Omit the mushrooms & wine, replace wine with beef broth. Add celery & use whole baby potatoes & whole baby carrots, only use 1/2 c onion chopped in cm pieces. I will make this again, with my changes & might try with non alcoholic wine sometime but not mushrooms, Ive never had stew with mushrooms & dont plan to start. I just changed this up a bit to what my vision of the perfect beef stew is. soo good.

Coconut Cream Cake I

I could not make these work as cup cakes, I worked my way around it & was able to make it semi-okay. Pouring the sweetened condensed milk & coconut mixture over the cupcakes is what made me unable to hand these out to people. I ended up peeling the wrapper off all of them out of the oven & poured the mixture over each cupcake, I will try making this as a cake if I like the cup cakes, they're chilling now & waiting for frosting. I used my favorite white cake recipe the "Simple White Cake" from this site & then just followed along from there. This recipe is great, just not a cupcake recipe. Ive been craving coconut flakes, so excited to try these tomarrow morning.

Southern Candied Sweet Potatoes

I made these for Thanksgiving & they're soo yummy. It looked like too little butter & too much sugar but it was perfect & I also used 1/2 as much nutmeg. I used fresh sweet potatoes & Im going to make this again only put it in a casserole dish & melt mini marshmallows on top. Yesterday I made it completely on the stove & had no marshmallows anyway.

Wedding Cake Frosting

I never use shortening, only butter. This tasted way too much of butter & it was too watery. I found this out after I had put it in the pipeing bag or I'd have added more sugar to it to thicken it up, I iced my cup cakes anyway & put them in the fridge hoping that will do the trick. I chose this recipe because it had no egg, Im saving my last egg for another recipe. I wont be using this recipe again.

Zucchini and Corn Gratin

This was good. I used frozen corn. I recommend putting the zucchini in with the corn though, unless you like really crunchy zucchini. I agree it was a bit bland also. I put a little garlic powder, salt & pepper in it. I'd give it 4 stars because I put my zucchini in with the corn & I still had to cook it longer than stated. But this is going on rotation for being simple to cook up & is yummy comfort food. 5 stars.
