Potato Leek Soup III

This was pretty good, however, you can easily cut out a ton of the fat and still have a very delicious soup! I used only 1/2 cup butter and half and half instead of heavy cream and it still came out very rich. Next time, I am using whole milk and only 1/3 cup butter. I also added one cup of sweet corn and a little thyme. The additions really helped round it out a bit more.

Portobello Penne Pasta Casserole

Turned out pretty good, the soy sauce added some nice flavor. I cut the amount of butter in half though and still turned out great, with half the fat!

Risotto with Tomato, Corn and Basil

This was pretty good! I used frozen corn, but a fresh tomato and it turned out well. I only gave it four because I have had mushroom risotto that is better, but this is a nice alternative.

Portobello Mushroom Caps and Veggies

This is a good base recipe. I think you need to add a little more flavor for the mushrooms to soak up. I used soy sauce or teriyaki sauce, both are great.

Unsloppy Joes

These turned out pretty good. Reading some of the other reviews, I halved the amount of chili powder. It was still pretty spicy that way, so next time, I will use even less. I also ended up adding one tablespoon of BBQ sauce, since something just seemed to be "missing". That made it perfect. Fun recipe and kids will love it!

Zucchini Slice

Ugh, can I give this a zero or a negative 5? This was absolutely disgusting, worst dish I have ever made, ever! I can't even give comments to improve upon it. The taste was terrible, I could not even finish was serving. Extremely acidic, bitter and gross.

Spinach Enchiladas

I thought these turned out pretty good. I used enchilada sauce with medium spice to add more flavor. I would probably also add more fresh spinach next time, but the amount of ricotta cheese seemed about right.

Spanakopita (Greek Spinach Pie)

I couldn't find any phyllo dough, so I just made this as a regular quiche with the same ingredients (just filled a pie crust). It turned out great.

Vegetarian Split Pea Soup

Very good recipe, I love the chipotle flavoring! I did this a crock pot for about 9 hours, half on high, half on low temp and it turned out great. I stil fryed the vegetables for 5 minutes first and I cooked the orzo seperately and then added it.

Spicy Butter Cookies

I love these! Quick, easy, great for kids to help out with. I only changed one thing. I added 1/4 brown sugar and only 3/4 white sugar. Cookies came out very soft and chewy and stayed that way for days. Delicious!

Artichoke Pie

I thought this was very good. I used 2 jars of marinated artichoke hearts instead of canned ones based on the advice of others. It definitely added a lot of flavor, but it is rich and very filling.
