Southern Potato Salad

I omitted the celery per my husband's request. I also added about 1/2 cup chopped small sweet pickles instead of relish. Everyone loved it...even my best friend, who is a self-proclaimed tater salad snob. She loved it. Kudos!

White Chocolate Raspberry Cheesecake

I made this for Christmas and EVERYONE thought it was amazing. They couldn't believe it came out of my kitchen. To save time and money, I did use seedless rasberry jam instead of fresh rasberries as someone had suggested. I also cooked the cake in a water bath. Once the cake was cooked, I turned the oven off and let the cake cool with the oven. My cheesecakes never crack or dry with this method. YUM!

No-Bake Chocolate Peanut Butter Bars

I was a little nervous making these b/c the previous review was not too positive. There seemed to be a lot of graham cracker crumbs so I cut it down to 2-2 1/2 cups. I also ran out of peanut butter so I only added 1/2 cup to the chocolate layer. I did increase the chocolate chips a bit on top to balance the peanut butter base. It actually turned out pretty darn GOOD! My kids looked like they had died and gone to heaven when I served them. My husband thought they were way too rich to be brownie-sized. I just cut them into 1 1/2 inch squares (no bigger) and they are great small pieces of heaven-(if you are into peanut butter and chocolate like I am). I'd totally make this again!

Creamy Spiced Coleslaw

SOOOOO Easy, SOOOOOO yummy. My Friends absolutely loved it (and even started spreading it on their burgers)! The best part was how quick it was to make. I will definately be repeating this again. It was a little soupy at the end so I might add more coleslaw mix next time or drain of some excess after it has marinated a few hours. Thanks for the easiest recipe that will impress your friends!

Mud Pie II

Maybe Im not as advanced as the other cooks who have rated this recipe. Though the finished product tasted outstanding, the process was not easy. I melted my spatula into the caramel sauce and had to re-do that part. I forgot how hot the stuff was so when I put water in the pan I had to throw out, it splattered all over and burned my toes! I know that mistake was purely do to my haste. The part Im still not sure of is the last layer of fudge sauce over the ice cream. It solidified before I could spread it over the whole pie. Also, when I went to cut the pie, the top layer of fudge stuck to my knife instead of the pie. Maybe I didnt freeze the ice cream long enough and cool the fudge off enough. I hope that helps the next cook. I still recommend the recipe cuz no matter what it looked like served up, I was sooooooo tasty!
