Aussie Chicken

just tried this recipe today. wow - flavors just burst on the palate. normally one piece of chicken breast is not going to fill me but this had me almost forcing that last bite. fried the bacon first, then used the drippings to saute the mushrooms, then in the same skillet browned the chicken (6 breasts, 3 pounds). followed the recipe for the honey mustard sauce, which ended up with too much (going to use the leftover sauce for almost any next cooking adventure - love that flavor). placed the breasts in a baking dish, spooned the sauce over them, then layered in the mushrooms (probably 2 - 3 cups raw before the sauteing), the bacon and monterey jack cheese (not nearly the amount called for), baked in a toaster over at 350 for 15 minutes covered with tin foil, then another 15 minute uncovered. wonderful......
