Avocado Salad

Delicious. Cut all the vegetables except onion into bigger pieces so that it was less of a " chopped salad". Added boiled shrimp tossed in lime, crushed red pepper flakes. So fresh and healthy.

Roasted Asparagus and Yellow Pepper Salad

Put the veggies all in a ziplock. Drizzle in some olive oil, sprinkle in some salt and pepper and roast. So good on it's own, didn't even need the dressing even though I had already made some.

Good for rotation. For the kids, I served on top of whole wheat spaghetti. For myself (because its so unhealthy but so good), I put it on top of fritos and then sprinkled shredded cheese, green onions and sour cream on top.

Chicken Pot Pie IX

Added to my rotation. I don't like carrots or peas so I chopped up some broccoli and diced potatos (about 1 cup each) and added them to the chicken the last 5 minutes it was cooking. Added some corn (about 1/2 cup) to chicken mix before adding to the pan. Made it the night before (let the chicken mix and sauce to cool before adding to the pie pan) and cooked at 350 for 60 min the next day.

Parmesan Chicken I

Great Recipe. Will add it as part of our meal rotation to serve along with Delicious and Easy Mock Risotto from this website. I panfried the breaded chicken in some butter for a minute on each side and then popped it in the oven for 30 minutes at 375.

Delicious and Easy Mock Risotto

Tasty and easy. I added a couple tbsp of milk whenever it got dry. In total, probably used about 1/2 cup milk. Will be part of my rotation to serve alongside Parmesan Chicken 1 from this website. Next time, I will add wilted spinach for a balanced meal.

Angie's Dad's Best Cabbage Coleslaw

This is the best coleslaw I've ever had. It's a nice change from the mayo kind - I think it's even better. As others suggested, I halved the sauce mix and sugar. I didn't have any celery and added 1 tsp celery seed instead. I sampled some right after I made it and couldn't stop nibbling. I made it to go with the pulled bbq pork sandwich for dinner the next night. I'm sure I won't have any left over to test the "melding" theory. Thanks!

Slow Cooker Chicken and Dumplings

Yum, will definately make this again. Made some slight modifications per others reviews - 1) used 1 can cream of celery and 1 can cream chicken, 2) 3 stalks of celery and take out before eating, 3) 1/4 tsp poultry seasoning, salt and pepper each and 4) 1 can of Grand bisquits, rolled/flatten and cut into strips. I wasn't sure how much water to really add since the soup inself already covered the chicken so I used about 3 cups of water. Added bisquits and cooked on high for last 45 minutes because that was all the time I had. I think 1.5 to 2 hours would make it less doughy.

Slow Cooker Beef Stroganoff I

Really good. It came out a little salty as I added 1 beef boullion cube and 1/4 packet of soup onion mix. Next time I will omit either the beef boullion or soup mix altogether. Also added a tbls or two of sour cream at the end. Beef was tender and base was flavorful. Would use this as part of rotation.

Oatmeal Blueberry Muffins

This is perfect. Was looking for a healthy muffin for snacks for my kids. I used 2 cups of blueberries and coated them in 2 tbls of brown sugar before folding them in. This recipe is flexible for modifications - will try next time with apples.
