Spanish Flan

Reviewed: May 11, 2014
Great flan! I also kept the ramekins in the oven while I made the caramel so the melted sugar wouldn't harden too quickly. I made the melted sugar in the microwave (1/4 cup water and 3/4 cup sugar and 3 drops of lemon juice) for 6 minutes until golden. I used 4 eggs and added 1/4th tablespoon of almond extract to the custard portion as well. Lastly, I too placed the ramekins in a cake pan filled halfway with water. Baked for 1 hour uncovered. Turned out perfect! Makes 6 ramekins. UPDATE: Repeated this again as a healthier version with fat free evaporated milk and fat free condensed milk and only used 3 eggs as recipe called for and it was just as good as when I made it before!

Sopapilla Cheesecake Pie

Reviewed: Mar. 29, 2014
Great recipe! I used 3 blocks of cream cheese and I only used 3/4 cup sugar to the mix. Also added 1/4tsp of Almond Extract along with the Vanilla. I did not roll out the dough, used pinched the seams together. Then I brushed the top pastry layer with completely melted butter (only 1/4th of butter substitute) and then sprinkled the cinnamon/sugar mixture evenly across (I only used 1/2 cup of sugar on top). Baking time was about 30 minutes. I let refrigerate over night and then cut in the morning. I had honey out for folks to add as they wished, but it was perfect without any honey. Next time I would like to incorporate the lemon zest others have added.

Beaufort Stew

Reviewed: Sep. 15, 2013
I agree the recipe needs tweaking but we loved it! I boiled the potatoes for about 15 minutes before adding the sausage for about 5 minutes, then added fresh corn for 5 minutes in the meantime adding crab legs and shrimp for 2-3 minutes to finish. In hindsight my pot was a little small (I ended up having to fish out the potatoes and corn to make room for the seafood), and I should have left the crab legs in a tad bit longer to heat. Also, although I used the full 3 ounces of boil mix it still needed salt. This was fantastic and easy!

White Almond Wedding Cake

Reviewed: Sep. 1, 2013
GREAT recipe. I used it exactly as is except used doubled the almond extract. I also used a "moist" cake box mix. I used pilsbury cream cheese icing thinly iced. The cake was completely gone at the end of the birthday party - 6 adults and one picky 9 year old who loved it! It did take about 45 minutes, not the recommended 25 as listed on the recipe. Oh...I also used a 9x13...UPDATE: just made this for a second time and did the same as above but added sliced almonds to the top of the icing and it was fantastic!

Garlic Chicken

Reviewed: Aug. 18, 2013
Great recipe! I had large thick chicken breasts so I needed more bread crumbs and Parmesan cheese then the recipe called for. Next time I'll either filet the breast or get some that are not quite as thick so you can taste the breading from each side per bite. Because of their size it took approx 40 minutes in the oven. Also, next time I will use a rack as the chicken got a bit soggy at the bottom. I paired this with the recipe for oven roasted asparagus (which also calls for Parmesan cheese) from this website and it was a big hit for my family! Will cook again and again. Easy and delicious!

Campbell's® 15-Minute Chicken and Rice Dinner

Reviewed: Jul. 28, 2013
I too added onion powder, paprika, garlic powder and pepper before browning the chicken and later when placing the chicken back in. Also replaced water with chicken broth and only used 1.5 cups ofinstant rice. Butterfly the chicken or you will end up having to cook a lot longer. Even with the butter flying I had to cook covered for an additional 10 minutes. Next time I would replace the broccoli with peas (just a personal choice) and add salt, less paprika. My family lived this quick and easy recipe!
