Spanish Flan
Great flan! I also kept the ramekins in the oven while I made the caramel so the melted sugar wouldn't harden too quickly. I made the melted sugar in the microwave (1/4 cup water and 3/4 cup sugar and 3 drops of lemon juice) for 6 minutes until golden. I used 4 eggs and added 1/4th tablespoon of almond extract to the custard portion as well. Lastly, I too placed the ramekins in a cake pan filled halfway with water. Baked for 1 hour uncovered. Turned out perfect! Makes 6 ramekins. UPDATE: Repeated this again as a healthier version with fat free evaporated milk and fat free condensed milk and only used 3 eggs as recipe called for and it was just as good as when I made it before!

Sopapilla Cheesecake Pie
Great recipe! I used 3 blocks of cream cheese and I only used 3/4 cup sugar to the mix. Also added 1/4tsp of Almond Extract along with the Vanilla. I did not roll out the dough, used pinched the seams together. Then I brushed the top pastry layer with completely melted butter (only 1/4th of butter substitute) and then sprinkled the cinnamon/sugar mixture evenly across (I only used 1/2 cup of sugar on top). Baking time was about 30 minutes. I let refrigerate over night and then cut in the morning. I had honey out for folks to add as they wished, but it was perfect without any honey. Next time I would like to incorporate the lemon zest others have added.

Beaufort Stew
I agree the recipe needs tweaking but we loved it! I boiled the potatoes for about 15 minutes before adding the sausage for about 5 minutes, then added fresh corn for 5 minutes in the meantime adding crab legs and shrimp for 2-3 minutes to finish. In hindsight my pot was a little small (I ended up having to fish out the potatoes and corn to make room for the seafood), and I should have left the crab legs in a tad bit longer to heat. Also, although I used the full 3 ounces of boil mix it still needed salt. This was fantastic and easy!
