Apple Pumpkin Muffins

These muffins were amazing. Everyone loved them--no leftovers. I substituted apple sauce for the oil and they were moist and delicious. I used quite a bit less butter in the streusel and it came out great. The muffins stored well overnight, but the streusel got mushy. They tasted great, but if you want them to be as pretty as possible, make them the day you want to serve them.

Bacon Cheddar Chive Muffins

Not something that I'd make all of the time since it took over an hour to make a double batch, but everyone really liked them. Although I'd be willing to eat them for breakfast, I'm not sure that I'd call them a breakfast muffin. Also, they remind me more of drop biscuits than muffins and didn't cook for nearly as long. Mini-muffins took 12 minutes and full size muffins took 16 minutes. After reading that some other cooks found the recipe a bit bland, I made these changes: 1. I increased the amount of Parmesan, garlic, & chives by about about half again. 2. I substituted buttermilk for the milk and added a bit more to make up for the extra thickness 3. I used the bacon fat instead of the oil I might make them next time w/o the bacon. If I did, I think that they'd remind me of the Red Lobster biscuits.

Cranberry Orange Bread

I took the advice of others and used Craisons and chopped up the orange segments. I baked them for 16 minutes in mini-muffin cups and they came out great! Moist and delicious! I'll definately be making these again.

Chicken Enchiladas I

Fantastic recipe. I used enchilada sauce instead of taco sauce. The only thing that I would change if I made it again is that I would put some sauce on the bottom of the baking dish before arranging the enchiladas because they stuck to the dish. If you aren't a huge onion fan, I might recommend sauteing them before adding them to the mix. The dish doesn't bake long enough to mellow them very much.
