I am currently disabled due to an illness.. which gives me lots of time to search for and try new recipes. I love to cook and try out new things. I have three spoiled rotten cats and a hubby of 2 yrs (so far). and i do really love this site!!
My favorite things to cook
Anything Mexican!!!! Italian being my 2nd favorite.. then of course dessert!! who doesn't like dessert!!

Made my very first soup.. from this site actually... and was amazed it was actually reallllly good!!!
My cooking tragedies
hmmm.. i tried to make these rice patties once... saw a recipe.. but alas.. it didnt work out too well cause i used leftover minute rice.. no starch to hold em together(oops) hubby ate them anyway.. then asked not to make them again pleaseeeeeeee...lol

Applesauce Bread I
This was very good!! I only had some cups of mango peach applesauce so i used those, added 2 small chopped apples and some chopped walnuts, i also increased the spice (as per previous reviews) to 2 tsp cinnamon, 1/4 tsp ginger and a sprinkle of nutmeg. Made 1 loaf and 12 muffins came out nice and moist and yummy DH ate 3 of the muffins while they were still quite warm! Will make again for sure!!!

Chili Chicken Stew
This was pretty good, after reading the reviews i made a few changes... i omitted the tomatoes.. used only i can each of chicken soup and broth, boiled some cubed potatoes, added a small can of diced chilies, and only about 1/2 tsp of chili powder ( hubby's a spice wimp ) i also scaled down the onions and pepper to only a half of each, added a little frozen corn. this served the 2 of us for dinner and had lunch the next day :)

Cheesy Chicken and Rice Casserole
This was great.. i of course made changes again..lol cant seem to leave anything alone. I took the advise of one person and did add some broccoli, also used broccoli and cheese soup instead of the cream of chicken. i topped this with some french fried onions and some extra cheese right at the end
