Grandpa's Peanut Butter Fudge

I made this fudge twice last Christmas for holiday gift plates, and my life-long love affair with chocolate fudge took a sudden turn...all I can say is one of the batches never left the house.

Pepperoni Pizza Casserole

This is a favorite of my neice's, but I leave out the mushrooms and olives. I mix everything but 1/3 of the mozzarella and all the pepperoni, then layer the cheese and pepperoni over the top like a pizza. It can still be somewhat time-consuming, but less so if you already have leftover pasta sauce with meat, or already cooked ground beef.

Aunt Cora's World's Greatest Cookies

I have made this recipe several times because these cookies are awesome. They are practically no-fail because the peanut butter makes the cookies bake up super nice, but the flavor is much lighter than plain peanut butter cookies. Now I always make a double batch so there are some left the next day; the kids love them as much as Mom.

Pineapple Cobbler

I was upset that I used part of my "treat" budget on this. I don't think it mattered, but I left out the cherries, as my family does not like them. The product was extremely buttery. The pineapple was sickly sweet and added too much moisture, which caused the middle to be uncooked. (Because of the butter browning the edges, I had to take it out of the oven.)

Good Old Fashioned Pancakes

When I first started cooking our neighbor, who had the adjoining farm since my grampa was young, let me have a copy of her recipe for pancakes, called "old-fashioned pancakes." I lost it many years ago, but had it memorized, as pancakes are a favorite of mine and were the first things I learned to cook from scratch. I immediately recognized the recipe. What a pleasant surprise! I have used many different recipes for pancakes, but this remains my husband's favorite. They freeze well, and are good for an easy snack with jelly.

Three Packet Slow Cooker Roast

Friends happened to drop by and I got loads of compliments from the family and visitors. Meat was not at all dry (without searing)! The cost of the mix packets was worth the ease of preparation...I will look for bulk/sale season packets. The broth made an excellent gravy but was extremely salty/rich, so beware of adding seasoning. I made a double batch of mashed potatoes and used the leftover gravy and potatoes to make shephard's pie.
