Slow Cooker Fruit, Nuts, and Spice Oatmeal
Delicious and easy! I set my medium size crockpot to Low and it was all cooked and a bit dry at 5 hours, so I stirred in additional 1 to 1.5 cups water. The kitchen smelled wonderful, like apple pie. Fine to omit the butter. I used raisins b/c that's what I had, so I'll try cranberries next time! I sprinkled chopped walnuts just before serving to maintain good crunch- great! Also drizzled a tiny amount of honey on top per the kids' request.

Turkey Veggie Meatloaf Cups
These are nicely portioned, delicious and nutritious! I made these last night, and my young kids gobbled them up (not knowing how much veggies were in it, LOL)! Great all-in-one kid-friendly dish: vegs, grains, and lean meat protein. I used organic whole wheat couscous and it turned out great! Also, I used ketchup instead of BBQ sauce b/c that's what my kids prefer. I also like that you can substitute your veggie of choice- I used yellow squash instead of onions. This will become a regular at my house.

Brazilian Chicken with Coconut Milk
I made this for my husband and me and it was delicious served over brown rice. Since we cannot handle too much spice, I only used one jalapeno and skipped the turmeric (didn't have any) and it turned out great.
