Crusted Cinnamon Walnuts

Reviewed: Apr. 25, 2015
Just made a batch of these using pecans instead of walnuts. Not sure if was the kind of nuts I used or if my oven bakes hot but they only took 1 hour at 200. They may be the best thing I've ever tasted - even better than the ones we had at Disney World. I also used parchment paper & they didn't stick at all, although I did stir them after the first 30 minutes. If they last long enough they may be really good in salads.

Mom's Favorite Baked Mac and Cheese

Reviewed: Mar. 3, 2015
This is a wonderful mac & cheese recipe! I love the addition of onion & dry mustard. They gave it a bit of zip that most recipes don't have. I took ShawnChef's advice & added buttered breadcrumbs to the top & it was wonderful. We'll be making this often. Thank for a great recipe.

Moist Banana Muffins

Made these with 1/2 brown sugar & 1/2 white, added a teaspoon each of vanilla & cinnamon & used chopped pecans instead of chocolate chips. Best muffins I ever made!

Best Baked French Fries

Reviewed: Jun. 28, 2014
This sounded great but I didn't have any large potatoes so I used small redskins cut into equal sized slices. I did everything else the same except took the hint someone else posted to roast them on a rack so they didn't have to be turned. They were wonderful, much better than any I've made in the past that didn't call for the sugar. This recipe is a keeper! Thanks for sharing it!

Broccoli-Cauliflower Salad

Reviewed: Jun. 6, 2014
This has been one of my favorite recipes for years. The only thing I do different is adding a cup or so of (still frozen) peas. My kids prefer it without the eggs, but either way it's great!

No-Bake Crispy Potato Chip Mac and Cheese

Iit was too heavy, too much fat, & the potato chip topping was greasy & awful! Will never make this again.

Irish Bacon And Cabbage Soup

Reviewed: Mar. 18, 2014
I was looking forward to how this soup would taste the 2nd day since so many reviewers said it was better reheated but it was so good the 1st day we didn't have any leftover. I'm going to make another batch in a few days in my crock pot after browning the bacon. The only changes I made was to fry some chopped onion after the bacon was browned. I used regular bacon because that's what I had. I also added a tablespoon of honey to offset the acid in the tomatoes & increased the broth slightly because it was too dry. This soup is wonderful! Thanks so much for sharing!

Mexican Lasagna Lite

I used wheat tortilla's & black beans because that's what I had on hand. Next time I'll use the corn tortillas but either way this is a keeper! Thanks you!

Strawberry Oatmeal Breakfast Smoothie

Reviewed: Feb. 21, 2014
I substituted honey for the sugar & ground up the oatmeal 1st like several other people commented & it was wonderful! The 2nd time I wanted one I was out of strawberries so I used homemade raspberry jam, skipped the sugar & threw in a banana. Then the kids made them with instant flavored oatmeal & fruit with no added sugar. Great basic recipe to get oatmeal without even noticing!

Creamy Yukon Mashed Potatoes

Reviewed: Jan. 9, 2014
Didn't have any goat cheese last time I made them so I used triple cream brie instead. Next time I'm going to use caramelized onions instead of the chives. Great base recipe as it stands but easy to change a bit & is still really good!

Slow Cooker White Chili with Chicken

Reviewed: Jan. 7, 2014
I think the reason some folks found this recipe too soupy is because they used canned beans instead of dried beans. If using canned you could use a lot less stock. I added more heat, too, but this is a great recipe! Thanks!

Snow Ice Cream II

Reviewed: Jan. 2, 2014
We make this, but to avoid the sugar being gritty we use confectioners sugar. Also the vanilla mixes in better if you mix it in with the first cup of milk, or better yet start with 1 cup of heavy cream to make it more decadent.

I made these less greasy by using precooked turkey sausage. I've also tried a bit of onions, green pepper, & mushrooms with very good results.

Grandma's Green Bean Casserole

Reviewed: Nov. 28, 2013
I love sour cream & cheese but we thought it was overkill - too much of a good thing that didn't add anything to this recipe. I did like the buttery cracker topping though & will use it instead of my usual breadcrumbs. (Don't like canned onion rings.) My family prefers it made with a homemade sauce with extra mushrooms & fresh steamed beans.

Country House Bed and Breakfast Casserole

Reviewed: Nov. 20, 2013
Much better if you leave the croutons out & serve it with toast. It's also ok to mix it up, pour it into a large frying pan on low, cover it, then turn it carefully when the eggs start to set. Sort of a cross between an omelet & scrambled eggs. You don't have to heat up your oven & it's ready much sooner.
