Stir-Fried Chicken With Pineapple and Peppers

Very easy recipe. I mixed the juice from the pineapple with the sauce ingredients.I also added some sliced zucchini. We ate it with super spicy homemade chili paste-but we put it on all asian-type foods. My 8 year old ate everything but picked out the pineapple. Wouldn't serve for company, but an easy weeknight dinner with steamed jasmine rice.

Honey Lime Chicken Wings

I baked these at 400 for 45 min to crisp them instead frying. I then brushed on the glaze that I had added a couple of dashes of tamari soy and baked at 450 until a little caramelized. Delicious!

Jackie's Sausage Soup

I used 3 turkey italian sausage links, added zucchini and carrots, and a squeeze of fresh lemon and a couple of grinds of black pepper at the end to punch it up. Great way to get kids to eat veggies! Would be good if cannelini beans were added for the last 10 min.

Bread Machine Rolls

I skipped the egg white, but just after baking I brushed them with butter mixed with parsley, garlic and parmesan. These were better than going out for italian.

Asian Style Meatloaf

I did change the recipe slightly by using very lean beef, and adding a couple cloves of garlic, a healthy dose of ground white pepper, and a red bell pepper. My entire family loved it! It was a nice change from most ground beef recipes.

Ginger Pork

I rated this a 5, even though I did tweak it according to our preferences and what I had on hand. I cubed a pork tenderloin because it was in the freezer, and I doubled the sauce ingreds and added about a tablespoon of freshly grated ginger. It was so good that even my six year old licked begged for seconds. I found that if you double the sauce ingreds, the thickness is just right to eat over rice. Was really delicious served with Thai sweet chili sauce!!!

This was just ok, could be made better with a little tweaking. If I ever did make it again, which I probably wouldn't because none of us cared for the consistency, I would add more sugar and cinnamon.
