I only had buttercup squash instead if buttercup, and it was amazing! Very flavorful and hearty.

Thai Grilled Chicken with Sweet Chile Dipping Sauce

Reviewed: Sep. 22, 2014
I didn't change much except for one key ingredient! I don't eat chicken, so I replaced chicken with extra firm tofu and baked it in the oven instead of grilling. It was absolutely amazing! I only had time to marinate the tofu for a half hour, and I kept the leftover marinade and heated it up to pour over the cooked tofu. I will definitely make this again!

Calypso Black Bean Soup

Reviewed: Aug. 6, 2014
Just like the other reviewers, I also urge people to try this recipe even though it has seemingly odd ingredients. The mango is definitely key, so don't substitute that for anything else!

So easy and so delicious! I made it to go with fish tacos, and I am extremely impressed.

Firecracker Grilled Alaska Salmon

Reviewed: Apr. 26, 2014
I only had time to marinate the fish for about an hour, so I cooked the excess marinade and poured it over the cooked fish. The marinade is nice and spicy and very dynamic. I will definitely make this again.

Marinated Wild Salmon

Reviewed: Apr. 26, 2014
I found this recipe too close to dinnertime, so I only marinated it for about an hour, but it was still extremely delicious and flavorful. I will definitely make this again and actually marinate it for the full time.

Reviewed: Apr. 26, 2014
This was very delicious, but I wanted some more dynamic flavors other than just coconut.

Cauliflower Pizza Crust

Reviewed: Apr. 26, 2014
The garlic and parsley in the crust added to the overall flavor of the pizza. The consistency of the crust wasn't very crispy, but it held up pretty nicely. This is not a low fat alternative to regular pizza, but it is very delicious.

Even though this recipe just has a few spices, it was extremely flavorful. This recipe stores well and is delicious hot or cold.

Spiced Quinoa

Reviewed: Apr. 26, 2014
Absolutely delicious spice blend and flavors! I decided not to add the garbanzo beans, and it was still delicious. It stores well and is great cold as well as hot.

Spicy Sweet Potato and Coconut Soup

Reviewed: Mar. 16, 2014
The only reason I am giving this recipe 4 stars instead of 5 is because the lemon flavor was too strong. I would use maybe 1 or 2 tablespoons instead. Other than that, this recipes is very easy with only a few ingredients, but extremely flavorful and delicious. Another nice thing about the soup is that it makes really good leftovers. I think it was even better the day after! I will definitely make this again (just with a little less lemon next time)!

Fast Salmon with a Ginger Glaze

Reviewed: Feb. 25, 2014
If you don't have time or you forget (like I did) to marinate your fish, this is an excellent alternative. The sauce is extremely flavorful and absolutely delicious! Just as the name of the recipe suggests, it is a very fast recipe to make, but just as delicious as if you spent hours making it.

Mulligatawny Soup II

Reviewed: Feb. 16, 2014
Sometimes a recipe comes along where you want to cry because it is so good. This is one of those recipes. The flavors were so delicious! I followed the recommendations and didn't puree the soup and I thought it was perfect.

Hot-and-Sour Prawn Soup with Lemon Grass

Reviewed: Feb. 2, 2014
Don't hesitate to make this recipe if you cannot find kaffir lime leaves in your grocery store. I made it without, and the soup was still absolutely amazing! I added some chinese noodles and used water and miso instead of chicken broth, and it was a perfect. I will definitely make this again.

Shrimp Lemon Pepper Linguini

Reviewed: Jan. 2, 2014
Absolutely delicious recipe! Because of food preferences and dietary restrictions of the family, I made it without chicken stock and used oil instead of butter. Also, I made homemade linguini so that brought everything to the next level. I ended up using the full amount of pepper and I thought it was perfect (but I love very peppery foods). I will definitely be making this again.

Maple Glazed Tofu

This recipe was WAY too sweet. Even with the mustard and the soy sauce, it tasted like tofu candy.

Biscotti Toscani

Great Biscotti! I didn't make the chocolate, and I don't think it needs it because it is already quite sweet. I would definitely make this again.

Marinated Tuna Steak

Reviewed: Nov. 10, 2013
This was a a great recipe, but it didn't have quite the intense flavor that I was looking for. I followed other reviews' advice and marinated the tuna steaks for almost 2 hours it was definitely worth the wait. Also, I saved the remaining marinade (and cooked it for a very long time, just in case) and used it to pour on individual servings of the tuna. It was very nice to have a bit more flavor for the tuna.

Honey Balsamic Vinaigrette

Reviewed: Nov. 10, 2013
This is the best salad dressing I have ever made, but I am a particular fan of the sweet-salty combo. I could seriously drink this stuff, but I'll put it on salad to make it a bit healthier!

I followed other reviewers' advice and only used 1/4 teaspoon of cinnamon. Amazing spice blend to use for many recipes that need a Moroccan twist!
