Hot Italian Giardiniera

I haven't tried this recipe yet but wanted to offer a suggestion to Daria Kilgore. (I had to rate it in order to post this suggestion and gave it 4 stars because olive oil will change texture when refrigerated) In place of the Olive Oil try Vegetable Oil for dishes you intend to refrigerate. It won't solidify like Olive Oil does ... just one of the many little tips I learned from my Italian mother. Hope that helps.

Irish Cream Liqueur II

This is sooo easy and sooo delicious. I did made a few changes to suit our taste and make it slightly less fattening :) I used: - 4 TBLS of chocolate syrup instead of baking chocolate. The chocolate incorporated better this way ...... of course you can add more :) ...... chocolate is good for you, right? - Half and Half instead of Heavy Cream ...... I know, I know, it won't be as rich or as thick but honestly it tastes great! - Like another reviewer I dissolved the coffee granules in some heated evaporated milk before adding. (Thanks MISI1818 :) and - Added 1/4 teas vanilla and 1/8 teas almond extract which is purely optional but added to the taste. Thanks so much 'cheap chef' EVERYONE loved this. I even gave some as gifts and they requested this be part of their Christmas present every year!

Chili I

This is just the BEST chili recipe ever. I have substituted skinless boneless chicken breast for the sirloin, I've omited the beef broth or the tomato paste when I didn't have them on hand, I've substituted tomato sauce or tomato puree for the broth. It comes out great every time. It's very user and pantry friendly :) The only real changes I made were to scale the recipe down to 4 servings (although it's even better left over) decrease the chili peppers and to add diced green pepper, parsley, garlic and basil. I also put all the beans in at once and simmer for about 2 hours, adding a little water if it gets too thick while simmering. It has alot of unusual ingredients (coffee, cocoa etc) which is what made me want to try it. Surprisingly they all work together well. Serve this with some warm garlic bread and a crisp salad and you have a delicious and easy meal. My DH who doesn't like Chili said this is the best!

Basic Crepes

These are the BEST and EASIEST crepes ever. I modified a bit to suit our tastes by adding a dash of vanilla and about 2 teas. sugar to the batter and mixing it with a hand mixer to avoid any lumps, and they were great. We topped them with sliced strawberries that had been sprinkled with a little sugar and left to sit while the crepes cooked. Did the same with blueberries that we had on hand. Then rolled them, sprinkled with powdered sugar and topped with a little whipped cream. WONDERFUL, Elegant and Easy. You can also make the batter the night before and refrigerate if you're in a hurry. My youngest likes to eat them right out of the pan! He's also heated leftover crepes in the microwave, wrapped sliced ham and cheese in them and made a quick snack or weekend lunch with the leftovers :) Easy, great tasing and versatile too!

Anniversary Chicken I

My family loves this. It's easy and delicious. The only changes I made were to use regular onions (all I had on hand) and to use real bacon instead of bacon bits. I also cut the teriyake sauce back to 1/4 cup because it was a little too salty for us using 1/2 cup. This has become a regular at our house.

Oven Fried Chicken III

Uhmmmm Uhmmm good. This is easy and turns out moist every time. I made the following changes: Skinned the chicken, dipped it in flour first, used a 1/2 cup mayo and a 1/2 cup sour cream and thinned the mayo mixture with milk to make it into a thick milk wash. I also added 1/4 - 1/2 teas. cayenne pepper to the bread crumbs mixture to give it a little kick. My family, young and old :) love this recipe.

Linda's Fake and Bake Chicken

This is good and fairly easy. The only change I made was to use regular milk because that's all I had at the time. It turned out good. Next time I think I will add some Frank's hot sause to the milk and egg mixture to add a little flavor and kick. Great non-fry recipe,

Onion Bake

Yummy and easy too. My family loves this and it is very filling....Can use as the main course on a chilly evening. The only change I made was to sprinkle parmesean cheese on the bread before baking. Thanks so much.

Texas Pork Ribs

These were the BEST. Easy to make and wonderful to eat :) Great even without grilling. We have used the rub on boneless chicken and its great too. This is the rib recipe to use. The only change I made was to slice the ribs into single rib pieces before rubbing them. Yummy! Thanks for sharing.

Asian Salmon
