Potato and Bean Enchiladas

Very yummy and filling, thou you can have these ("a sufficiency", my Nana used to say) and not be left with that awful "stuffed-full" feeling. I like the tomatillos - I haven't ever tried them before but now our market carries them so I thought: "worth a try" and I'm glad I did!

Insanely Easy Vegetarian Chili

This is great. The mushrooms are different but add a dimension of texture that a lot of veggie chilis are missing. I cooked this the night before serving, as most chili "aficianados" recommend. Before serving, I sliced queso blanco in 1/4" slices and fried it both sides, Serving the chili in crocks topped with a slice of the fried cheese, slivered fresh habenero, and red onion slices, and served a wedge of haas avacado on the side. Good stuff!
