This is great. The mushrooms are different but add a dimension of texture that a lot of veggie chilis are missing. I cooked this the night before serving, as most chili "aficianados" recommend. Before serving, I sliced queso blanco in 1/4" slices and fried it both sides, Serving the chili in crocks topped with a slice of the fried cheese, slivered fresh habenero, and red onion slices, and served a wedge of haas avacado on the side. Good stuff!
