Marinated Baked Pork Chops
I really liked this easy recipe! Nice and tender chops, and all the ingredients were already in my pantry. I used 4 pork chops and thought the sauce amount was just right. Because they were not swimming in sauce, the little amount spread on each chop (about 1 T. each)bubbled and cooked into a nice glaze with no broiling needed. Strange name though because the chops don't sit in a marinade for any length of time at all. I will definitely line my pan with foil next time because my dish will soaking for awhile with burnt on sauce.

Strawberry Vinaigrette
I wanted to review this because I disagree with the horrible reviews. I also wondered about the amount of vinegar, but I thought the amount of balsamic was perfect because you don't want to overpower the strawberry flavor. I did use canola oil instead of olive oil because I didn't want the stronger flavor of olive oil coming through. I also added 2 T. sugar after tasting. I did not find the texture to be too thick - I think this may depend on your strawberries. I used very soft, juicy local berries. Not those hard California berries you buy at the market. I think this really made the difference in making a very good dressing.

Pumpkin Casserole
This was delicious! I cut the recipe in half for four of us and baked in four custard cups. I didn't have self rising flour so I used the substitute of other reviewers. Also subbed applesauce for all the butter and used fat free evaporated milk and it turned out great and very healthy too!
