Chef John's Buttermilk Fried Chicken

Very crispy and delicious IF you double the flour seasonings. I also added 1 teaspoon of bouquet garni as well as 1 teaspoon of chile powder (we like spice). Next time I will try ancho or chipotle chili powder. Let the coated chicken set for a few minutes so the flour coating was wet and pasty looking. Used a deep fryer with the temp at 315-320F cooking the chicken between 13-15minutes in two batches as to not crowd the chicken. Placed on a wire rack in a jelly roll pan and let rest in a 325F oven for about 10 minutes. Very good and crispy!

Simple Garlic Shrimp

Awesome and the best garlic shrimp I've had! Served over a bed a slightly wilted spinach rather than bread. Made a little extra sauce otherwise followed the recipe. Will try serving it over fresh spinach fettuccini or artichoke pasta. It is critical to have everything prepped and I would combine what you can to avoid over cooking the shrimp. I used junco (13-15/lb) so they were not over cooked. I can see if smaller than extra large (16-20) are used times may need to be adjusted downward. Also want to try using a little white wine next time. A definite keeper especially since it is quick and ingredients I always have on hand.

Amazing Muffin Cups

Awesome and great and make wonderful leftovers. I did use Simply Potatoes Southwest Hash Browns. Awesome flavor. The only issue I had was they stuck in the muffin tin, however, do have a few old non-stick pan which might have been the problem. Will make again for sure in my new muffin pan! So versatile.
