Blueberry Popovers

This was a great recipe. I read the reviews that said it was a bit eggy. Well, it is supposed to be, it is a popover! They were perfect. I wanted a light dessert to serve after our heavy meal. This was the perfect little bite. I will also use these as brunch offerings.

Traci B's Callaloo Soup

I liked this soup for the nutrition.I added black beans instead of peas. I also added salt and a little jerk seasoning to amp up the flavor. I served it over quinoa. It could also be served over brown rice.

Salad Stuffed Shells

Okay, a qualifier: I did not actually try the salad recipe, but the idea of using large shells as the vehicle for any salad is ingenious! I can't believe I have never seen this before. I have a tuna/pasta salad recipe that I plan on serving using this idea rather than mixing the pasta with the salad. The only change I would make is to boil the pasta in highly salted water {salty like the sea}.

Cocoa Banana Bars

I have made this recipe as several times..it is wonderful, worth 5 stars. One day I intended to make this recipe as is; however, when I measured my banana, I only has a little over a cup. I searched my kitchen for something to add moisture, and found some cream of coconut. I added 3/4 cup to the bananas. Awesome!!!!!! Don't know if I would say they were better, but they were just as good. Just a little something extra.

Fresh Strawberry Pie I

My sister made this pie for my son's rehearsal dinner. Big, big hit. I have also made this with fresh blueberries nestled between the strawberries and topped with fresh whipped cream stars for all my American holidays

Traditional Gyro Meat

This was wonderful!!!The only thing I did different was to refrigerate the cooked loaf overnight, then slice it thin and griddle the slices. Delicioso!!!!

Pumpkin Bundt Cake

I made this recipe (as written) in muffin cups and added a streusel topping. Eat your heart out Starbucks and Dunkin Donuts. These were great. I did use fresh pumpkin puree, rather than canned.

Easy Arroz con Gandules

This was okay if you don't know what arroz con gandules is supposed to taste like. You must add spanish olives-3/4 Cup and capers-2 TBS, more garlic, and fry your sofrito in achiote oil!

Fried Bologna Casserole

Oh, the memory of Our Lady of Good Counsel Catholic Elementary School lunches! Miss Sophie served the mashed potatoes on top of the fried bologna and called them "Flying Saucers"! Thank you for the memory.

Bacon Wrapped Pork Medallions

This is a restaurant quality entree. I substituted fresh garlic-2 or three cloves, fresh basil-1 Tablespoon, fresh oregano-1 Tablepoon, sea salt-1 teaspoon, and fresh ground pepper-1/2 teaspoon. Add all of the seasonings to a mortar and pestle (I use a pilon) and grind to a paste. then proceed as the recipe states. Serve with mashed sweet potatoes, fresh cranberry relish, and a green salad for a quick and easy meal.
