I half-ed the recipe since I made it for one person. The first crepe came out a bit hard so I added a little more milk to thin it out. The second one came out perfectly :) . So if you halfen the recipe add a little more milk. Just enough to thin the mixture a bit. Maybe 1/8 cup of milk. And thanks to everyone's helpful comments I blended my wet ingredients before adding the flour :) ! Anyhoo, really really good. And if you're looking for a healthy vegan cream process 1cup of cashews with your favorite fruit and refrigerate for a bit. Can be eaten right out of the processor too but refrigeration will thicken it more. Add honey too if you'd like. Yaaaaay fooooood!
