This recipe is slightly too large for the Zojirushi mini. It hit the top of the lid so the crust was not browned or completely cooked there but other than that, it was fantastic. So if you have a mini you'll either need to adjust the ingredients or pop it into a bread pan for the second rising then finish in the oven. I may play around with both options.
I also made the following adjustments per other reviewers' suggestions. I used 2 generous tablespoons of honey instead of sugar and 2 tsp. active dry yeast (regular) and a slightly heaping tsp. of salt. After the yeast softened and before adding the flour I added about 1 T. of firm butter to the liquids, and 1/4 cup organic high oleic sunflower oil. Then I added 2 cups of bread flour, 1 cup sprouted wheat flour, 1 T. powdered milk, and the salt.
Delicious. Soft on the inside and perfect flaky crust with a lovely and tasty texture/flavor like nothing I've ever had from a bread machine before. The recipe seems fairly forgiving making it amenable to alterations and substitutions. Way better than the recipes that came with my machine. Not even in the same league.
