Bite-Sized Salmon Tikka

This tasted awesome, we only added a scant 1/2 tsp of cayenne because we are spice wimps and it was perfect for us, zingy but not enough to leave my mouth burning. Thank you for sharing your great recipe.

Chicken Fried Chicken

Awesome, I used 2 boneless skinless breasts into small chunks/fingers and after coating dropped in hot oil for approx 3 minutes at which time they were golden brown, I then finished them off in a 350 oven for 5 minutes and they were cooked perfectly. I didn't have any saltine crackers so I had to substitute some crushed white cheddar crackers, because of the substitution in crackers I didn't bother with any spice and the spice level was perfect for us. Next time I will add some buttermilk and a tsp or so of hot sauce to the egg dip for some added zip. Thanks for posting this great recipe idea! Forgot to mention that 2 average chicken breasts made 14 good sized chicken fingers.

Italian Bread Using a Bread Machine

Wow, this is fantastic exactly as written, I have made it twice in the past 3 days. The second time I made it I beat the egg with the 1 T of water and saved just enough of the mixture to brush over the top of the bread before baking and through the rest of the egg mixture into the bread maker before I started it up and I think it made the bread a little bit more tender. The first time I followed the recipe I noticed that a lot of the egg mixture went to waste because you only need a very small amount to brush over the tops before baking and figured it couldn't hurt to throw the egg into the dough rather than let it go to waste. Also don't forget roll the loaves in the cornmeal before placing in the pan and then sprinkle the cornmeal again on top after the egg wash. The cornmeal gives the bread a really nice texture on the crust

Big Ed's Cajun Shrimp Soup

This was awesome, the only thing a did different was used 4 cups of Clamato Juice instead of the 3 cups of Vegetable juice plus 1 cup of clam juice. I followed the rest of the spices exactly and everyone loved it.

Cheddar Beef Enchiladas

My hubby enjoyed this so I gave it 5 stars, however I didn't wrap the filling in tortillas and pour sauce over, as I can't stand it when they get soggy. I made the filling with the taco spice seasoning recipe from allrecipes (I didn't realize I was out of the packet seasoning) and used a can of kidney beans instead of refried (didn't have refried), also only used 1 cup of salsa and it was still a bit too spicy for me. Next time I may add 2 cans of soup and 3/4 cup of salsa. I made it without the tortillas, as a casserole and it was really yummy.

Grilled Chicken Thighs Tandoori

This was awesome, I used boneless skinless thighs and used my baking cooling rack over a cookie sheet as a grill in the oven at 425 for 25 minutes and they tasted just like they had been grilled on the bbq (it's -30 here right now and a foot of snow). They are not super spicy so some might like to add some cayenne for heat but they were perfect for us. I had no yogurt so substituted sour cream, seemed to work fine.

Dr. Michael's Yeasted Cornbread

The bread turned out great, I did substitute buttermilk for the regular milk as that is all I had on hand and added 1/2 tsp garlic salt and 1/2 of a small jalopeno pepper diced so the bread was definitely not bland. I noticed that the dough was having a hard time forming into a ball, the dough was very wet which may have been due to my additions so I ended up adding another 1/2 cup flour and the dough immediately formed nicely. I used the dough cycle on my bread maker and then removed and formed 2 loaves which I cooked at 350 for 25 minutes. The bread has a beautiful crust that rose nicely.

Shrimp Lemon Pepper Linguini

I doubled the sauce and actually cut down on the garlic thinking it would be too much but next time I will use the proper amount as it isn't as strong as I imagined. The sauce seemed to be very liquidy but after I added the linguine and let it sit for a short while it all got absorbed. The dish was delicious and even though I made a massive amount there was nothing left over, very tasty!

Best Bread Machine Bread

The best bread machine recipe ever! I tried this several times removing the dough before the last rise and putting it in my own bread pans like I have always had to do because I really have not had any luck using the bread machine for the entire process. Since this recipe produces such a nice loaf I thought today I would try and leave it to bake in the bread machine and low and behold it still bakes perfectly, the only thing I changed was adding 1 more tsp of salt.

Christmas Casserole Cookies I

Honestly I expected to hate these due to the coconut but my husband likes it and I had all these odd ingredients left over after cleaning my cupboards out. They turned out really well and we ended up fighting over who got the last cookie. I used sweetened angel flake coconut, candied cherries, candied ginger, walnuts and after the mixture had cooled down I also added chocolate chips. They were sticky to roll so I ended up using parchment paper to roll the mixture into a log and then sliced off equal portions which didn't require quite as much handling. Next time I will skip rolling them in sugar as they are pretty sweet already. I will definitely make them again as the whole family loved them.

Serbian Ground Beef, Veggie, and Potato Bake

My mixture was really dry, I used lean ground beef so once it was browned there really wasn't any grease left if the pan and after the addition of all the veg and spices the water and wine and a couple spoonfuls of cream did not make enough gravy, the mixture was still just dry so I had to add about 1/2 cup of sour cream as that was all I had on hand, also had to dot the topping of potato's with a bit of butter. It turned out not bad, I will probably make it again but will also cut down the black pepper and just add a few more red pepper flakes as I like them better, I would also add some garlic.

Round Steak Sauerbraten

I had to double the brown sugar and vinegar and would have preferred regular white vinegar for my own taste plus next time I will use a whole diced onion not the powdered onion which almost ruined it in my opinion but the end result was very tasty. I used a blade steak which I browned on the top of the stove and then put it with the sauce in my cast iron casserole dish on 250 for the whole afternoon, it smelled great and the steak was soo tender, served with mashed potato and veg and it hubby thought it was like Sunday dinner on a weekday with very little effort, thanks for sharing your recipe.

Brown Sugar Meatloaf

I used pork instead of beef as that is what I had on hand but otherwise followed the recipe as written. It was perfect, the best recipe I have ever used for meatloaf. I lined my meatloaf pan with parchment paper before adding all the ingredients and then just waited for it to cool a bit before inverting it carefully onto a platter so the sauce was on top, this worked great. I didn't like the idea of adding the sauce ingredients to the top of the meatloaf as some suggested because with the meatloaf cooking uncovered I felt that maybe the sugar topping would start to burn before the meatloaf was cooked. The texture of the finished meatloaf was really good, it was solid enough that you could slice thinly if desired without being too dense, definitely we'll be using this again, thanks for sharing the recipe.

Artichoke Nibbles

These were hit and were gone in no time but next time I will change the amount of artichoke liquid that you saute the onions in to just 1 tbsp as the finished product will not be so oily. I bought the huge jar of artichokes from costco and just measured out 1-1/2 cups of artichokes. I would also use a nice sharp cheddar and a good pinch of red pepper flakes in addition to the other spices to give them some bite, we are not huge hot spice lovers but these definitely could use a little more spice. this is a great appetizer or cocktail snack, and would also be great for a potluck.

Black Bean and Rice Enchiladas

This was delicious, my husband did not even notice that there was no meat and my vegetarian teenager thought they were awesome. The only change we made was to use the "Red Enchilada Sauce" recipe from this site in place of the salsa to pour over the top of them at the end. The spice in the filling was perfect for us, just the right amount of zip without tons of heat. Thanks for the great recipe.
