Boston Brown Bread III

To me, this brown bread is PERFECTION. I love it. I made it exactly as the recipe suggests. I'll never make another version again. (just a note: the directions forget to tell you to add the salt listed in the ingredients)

Delicious Moist Poppy Seed Cake

I made this with low calorie becel instead of butter, regular flour, I didn't have lemon peel so i put 2-3 tbsp lemon juice into the batter and I added a tsp of baking soda as well. It took about 60 min to bake in my loaf pan. I thought it turned out very tasty. Its the first lemon loaf I've tried so I have nothing else to compare it to...essentially the entire lemon flavour comes from the syrup that you add at the end....it looks like a lot but it is needed. I found that the top half of the loaf has more of the lemon flavour and is more moist compared to the bottom half.....but it's not really a huge issue...I think I will add more lemon juice to the batter next time and see what happens.(not that the end result wasn't lemony..it was) Definitely let the cake sit for 1 day before serving...it improves a lot.

Honey Poppy Seed Dressing

I made this with 1/4 c oil and 1/4 c sour cream...2 Tbsp of poppy seeds and no sesame seeds. The end result had harsh vinegar and sugar flavours....I added approx 1 tsp of each mustard and onion powder.(maybe more) I found that this really helped bring everything together. ( Kind of reminded me of the renees brand poppy seed dressing.) I put it on spinach salad with hard boiled eggs, diced red onion, shredded mozarella cheese and raisins. Update: I just thought I should write to say that my boyfriend loved this dressing..he liked it better than the kind we buy at the store.

Asian Chicken Salad

I was looking for a recipe similar to Wendy's Mandarin Chicken Salad. This one is very similar. I have tried it three times now and I like the dressing better with an extra table spoon of brown sugar, 1/4 tsp of ground mustard, and 1/4 tsp ground ginger...and absolutly add the sesame oil. Delicious.

Berry Oatmeal Muffins

I love this recipe. I use all whole wheat flour, brown sugar, pecans instead of walnuts, skim milk, 50% reduced fat becel margarine instead of oil and I throw in some cinnamon/allspice into the batter and omit the brown sugar oat topping. This is my new favorite muffin recipe for sure.

Baked Scallops

I added the crushed garlic with the butter and put it in the oven for a couple minutes before adding the scallops and crumb topping. Delicious. I'll be making these again soon.

Low-Fat Blueberry Bran Muffins

I made these muffins using bran cereal instead of wheat bran, 50% calorie reduced becel instead of applesauce and increased brown sugar to 3/4 c. I also sprinkled brown sugar on top before baking. Were very tasty. Made 9 large muffins.

Peanut Butter Banana Oatmeal Raisin

Very enjoyable. I used 2 small bananas, and 2 whole eggs. I used all whole wheat flour, and I am glad I did. I might try them again with just the egg whites. They do sort of remind me of muffin tops. They are soft and yummy. Don't over cook them....15-17 min is plentyyy. My boyfriend liked them as well. Definitely give these a try.

Spinach and Sun-Dried Tomato Pasta

This is really good. I didn't have pine nuts and used red pepper instead of red pepper flakes. Although I really enjoyed it, it is missing that wow factor that a recipe must have for me to give it 5 stars.

Leftover Chicken Croquettes

These are yummy. I didn't use as much chicken because I was just cooking for my boyfriend and I. I used 2 eggs and thought that it could use another one. Next time I will add another to make sure they are nice and moist. I added a bunch of random herbs and I added chopped green onion and chopped fresh chives to the regular onions. I served it with left over pecan and raisin sweet potato bake, spinach salad and cranberry sauce. Cranberry sauce is really good with these!

Black Bean Spread

This is good. I had it with toasted pita bread. My boyfriend didn't care for it, but he isn't a huge bean lover. I didn't have cumin, I put in a 1/4 tsp of curry powder instead. And I used mild salsa, and dumped some extra cottage cheese in the blender to make it a bit thicker.

Butter Crescents

These are so so so so yummy. I will make them again and again. I spread a layer of melted butter on them before I rolled them up as others suggested. I served them with chili for dinner and I think they will also be good for breakfast warmed with honey...I plan to try rolling them up with a brown sugar/cinnamon/butter mixture sometime too.

Delicious Rosemary Bread

I ran out of white flour and had to use 1 cup of whole wheat. It came out rather dense. But it still tasted pretty good. I'm not sure if I am going to try this one again with all white flour or just try some different recipes.

Grilled Salmon I

Nothing wrong with this recipe, I just prefer tasting the full flavour of the salmon..and soy sauce covers that up a bit. Others will like this recipe though, completely edible....especially if you don't love salmon I think this would be a good recipe....I probably don't like it that much because I think salmon is at it's best cooked plain with a lemon wedge.

Pasta With Spinach Sauce

This tastes a lot better than it looks. I used fresh spinach and cream of mushroom soup as that is what I had on hand. I also added some fresh chopped mushrooms along with the onion and ham. I also added some fresh ground pepper.

Oatmeal Raisin Cookies IV

These are yummy. I think next time I will make the cookies bigger. I dropped the dough by 1 inch round spoonfulls......it made like 80 cookies lol... Update: A few days later and we've gone through most of them. I actually think I'm satisfied with the size as well. If you don't over cook them they are moist and chewy. 10 minutes is plenty even if the dough doesn't look quite done in the middle. It sorts it self out as it cools. This for me is the perfect oatmeal cookie recipe.

Delicious Ham and Potato Soup

Where has this recipe been all my life??? I love it! I think it is SO delicious. I want to give it a gazillion stars. I haven't ever made any kind of soup before and this was so easy and the flavour is just fantastic. It is cold, windy, and snowy out right now, I can't wait for my boyfriend to come home from work so I can serve this up to him for dinner. It's a warm comforting meal. I am going to serve it with fresh bread and butter toasted in the oven.

Pasta Salad I

I thought this recipe was really enjoyable. The only vegetables I had in the fridge were broccoli, carrots and celery. It still turned out great! I will try it again using all of the ingredients...raisins would be good in it too I think. The dressing would also be good to just dip raw veggies into. Oh and I didn't use quite 1/4 cup of vinegar...a little less...just to taste.
