Spinach Enchiladas

We loved these!!! I didn't change much, just used EVOO instead of the butter. They will put these on the regular rotation for dinner.

Easy Salsa Meatloaf

I have made this a few times and we love it. Besides the cheese, I cook as directed and it turns out great every time. Also, I use ground turkey because we don't eat beef or pork so I wouldn't know the difference in flavor. I like how the salsa gives it flavor but doesn't overpower it. I make it with green beans and mashed potatoes (common menu for me growing up) and there is always some leftover for lunch the next day and that's it.

Five-Veggie Stir-Fry

Took others advice and omitted the sugar and I can't imagine it being any more sweeter. The OJ adds just enough sugar. Great meal for weekend days, quick and easy especially with frozen veggies.

Shrimp and Feta Cheese Pasta

Good and quick and easy, the best combo. Didn't really measure the herbs and wine, also used a can of diced tomatoes instead of fresh tomatoes. I will use two cans of diced tomatoes next time or fresh tomatoes. I also added red pepper flakes and some onion powder. Will add this to the rotation.

Blueberry Muffins II

I made these last night for my husband and he loved them! I sprinkled sugar on some of them but they all taste good, will add sugar to all of them next time. Might try whole wheat flour next time too.

Cumin Turkey Burgers

The only thing I didn't like was that they didn't hold their shape on the George Foreman grill so the big fat burgers turned into pancakes. But once my husband and I got pass the look, the taste was great! Even better the next day.

Maryland Crab Cakes II

I made this tonight and they turned out GREAT!!! They tasted like they came straight from the restaurant. I took the advice of others and add Old Bay but no salt or pepper. I used dried parsley since I didn't have any fresh parsley. I'm sure the fresh parsley would have made them even better. I love the fact that they are baked instead of fried, so much healthier. We made sandwiches out of them, like we have eaten them at some restaurants. I can't say enough, these were GREAT (again)!!!

Easy Cajun Jambalaya

I make this all the time and everyone loves it. I even made it for my fiance's family. And since it was the first meal that I made for them, I was a little nervous but all of them loved it. I try not to make it too spicy but that's hard since I love spicy foods. Depending on what I have in the pantry, I use brown or white rice. Both are good but the brown has to cook a little longer.

Turkey Bow Tie Skillet

I made this tonight and it is good. My fiance liked it and he can be a picky eater sometimes with new recipes. I used diced tomatoes since I didn't have any stewed ones. I made the pasta separate from the turkey mix and I didn't know what to do with the water, since I didn't use the chicken broth either. I would probably drain some of it off before mixing in the other ingredients next time. Also, we like our food with herbs and spices so I will probably add some to the turkey while browning it next time. But it did turn out good.

Broccoli Chicken Fettuccini Alfredo

I cooked this tonight and it was not good. It was edible but it tasted like soup with chicken, pasta and broccoli like a previous review stated. I should have listened to them. I will not make this again. I am used to eating meals with more taste and seasoning.

Easy Baked Tilapia

Great! I took the advice of others and added more Old Bay and used the lemon juice. It came out great! My boyfriend loved the dish which makes it a extra winner. The time to make this is good for the weekdays plus clean up is easy. I try to make this a few times during the month. Also, I used frozen carrots and broccoli since my boyfriend doesn't like cauliflower, still good.

Apple Crisp II

I made this for my boyfriend's birthday dinner and it ended up being ate up by the family that can by over the next week. Everyone loved it and it tasted better the next day. I was taking the suggestion of mixing the apples in a cinnamon and sugar mixture before putting on the topping, but I forgot and layered the entire bottom so I just sprinkled the apples with cinnamon, sugar and a little allspice and it turned out good! I might make some in the next few weeks with apples being all over the place now.

Louisiana Shrimp Creole II

I make this dish a lot because it is in high demand around my house. I do not measure a lot of the ingredients, especially the vegetables and sauce. I serve it over brown rice (to give it a healthier kick) and it still taste just as good. I added one turkey kielbasa and put some to the side for one of my guest that is allergic to shellfish and they really enjoyed it. It doesn't change the flavor, just give it more flavor.

Old-Fashioned Banana Pudding

I have made this for my boyfriend a number of times and he loves it. I don't like Banana Pudding but I know that he could not tell that it was healthier for him. The only thing is that it can stick to the bottom of the pan quickly so make sure that you stir it often. I will make this receipe again and again.
