I make the best macaroni and cheese and I changed the mind of my husband that could not stand it before he had mine.
My cooking tragedies
I tried to make my grandmother's Chocolate Pound Cake but it didn't cook fully and I had to throw the whole thing away. But within six months, I tried it again and it came out great!

Spinach Enchiladas
We loved these!!! I didn't change much, just used EVOO instead of the butter. They will put these on the regular rotation for dinner.

Easy Salsa Meatloaf
I have made this a few times and we love it. Besides the cheese, I cook as directed and it turns out great every time. Also, I use ground turkey because we don't eat beef or pork so I wouldn't know the difference in flavor. I like how the salsa gives it flavor but doesn't overpower it. I make it with green beans and mashed potatoes (common menu for me growing up) and there is always some leftover for lunch the next day and that's it.

Shrimp and Feta Cheese Pasta
Good and quick and easy, the best combo. Didn't really measure the herbs and wine, also used a can of diced tomatoes instead of fresh tomatoes. I will use two cans of diced tomatoes next time or fresh tomatoes. I also added red pepper flakes and some onion powder. Will add this to the rotation.
