Tuna Wellingtons with Pimento Cheese Sauce

These were so delicious, especially the sauce, but the crust was amazing, too. I think the dough can be rolled much thinner than 1/4 inch, though and that'd help you get more filling in the ratio. If I make this again for my family, I will just make it into one large pie, so it's quicker.

Pumpkin Pancakes

I feel like something's wrong with one of my ingredients. The last couple times I've made this, they just will not cook in the middle, even if I cook them on a lower temp. It's like they get sealed on the outside and stay gooey on the inside, instead of getting fluffy.

Chocolate Cobbler

I found this to be delicious and forgiving! I used half wheat flour and for the topping had run out of white sugar, so substituted powdered. I let it sit for a while (during dinner) before we ate it. Texture, flavor, everything was great!

Slow Cooker Mexican Casserole

It's true, you have to be careful about the cooking time. Regardless of a little burning on the edges, though, it was pretty good. My 22-month old devoured it and kept wanting more, and even ate leftovers of it the next day. The serving sizes are not very generous.

Vietnamese Stir-Fry

I don't eat meat so tried it with tilapia... the marinade was a bit too strong for the fish. The veggie sauce was great.

Salmon Broccoli Bake

Even though I added whipping cream, this was still pretty dry. Also, I will never used canned salmon unless I'm sure it doesn't have bones. It took forever to remove all those tiny, broken, softened bones. The flavor was good, though!

I was skeptical even after it was ready, because it's not that pleasing to the eye... but the flavor is incredible! No one even realized I used meatless chorizo. I prefer too cook the onions with the sauce than to leave them raw in the vinegar. And if you can't find corn tortillas, I'd personally suggest flour tortillas over using chips.

Crispy Chipotle Lime Tilapia with Cool Avocado Sauce

We loved the flavors of both sauces. It worked especially well with Orange Roughy fish. The only thing that didn't turn out great was the chip coating... I used a fresh bag, and ran them through the food processor, but maybe because it was a thicker chip, or I didn't crush them enough, the texture was too tough, like they were stale.

Hot Cross Buns

These turned out so great! I just didn't wait long enough for the buns to cool and added the frosting too soon which made the crosses into just blobs...but they still tasted good!

Easy Chicken Satay

This sauce was a hit, and really simple to make. Using the George Forman Grill wasn't the best, since I just have a small one and the marinade starts to burn on it, but that's my own issue. It was also a lot more sauce than we needed...but that's fine with us.

To Die For Blueberry Muffins

So I still feel like a pretty novice cook, so when a recipe turns out PERFECTLY it just makes my day. I'm glad I didn't only listen to the negative reviews! I follwed the directions exactly, except for cutting the crumb topping in half, and even only had frozen berries to use which I thawed under hot water. I filled them to the top, put on the crumb topping, put them in the middle rack of my 400 degree oven, and after 20 minutes exactly, they were cooked evenly, with the nicest muffin tops ever, just barely kissing each other. And the flavor was so good and sweet. They are a more crumbly muffin, but we like them that way! The only other thing I would recommend is not trying to eat 2 at a time! :o)

Cinnamon Rolls II

We loved these cinnamon rolls AFTER I used a whole EIGHT ounce package of cream cheese for the frosting...I don't know if the 3 ounce thing was a typo or what, but the frosting was really gross and only sugary that way. They were a little more dense than I like, too, but maybe that's because they didn't seem to rise very much...maybe the yeast I used.

Butternut Squash Soup

So rich and such a hit! In Chile, we could only find Hubbard squash to use, and it was fantastic. We'll find out this Thanksgiving how it's different w/ butternut squash. I cut down the cream cheese and add peeled chunks of red pepper after it's all mixed. Also, sometimes we save some broth for a thiner soup.

delicious! i doubled the dressing, and had to subsitute almonds for pecans which was fine. i like the ideas others had of adding bacon bits and/or leaving on red peels to add more color at the least.
