Andrea's Pasta Fagioli

Excellent and easy. I used canned diced Italian style tomatoes instead of tomato sauce and chicken stock instead of water. I also added half a box of frozen spinach. I took the suggestion of only using half a box of the pasta and it was perfect! It freezes well too. It smells great when simmering on the stove.

Mexican Bean and Rice Salad

Excellent salad. Easy to make. I only used one jalepano since I had kids eating it as well and they loved it! It is great to make the night before and just grab and go if you are bringing it to a party. Pretty presentation.

Vintage Lemonade

Fabulous lemonade. I definitely juiced the lemons first and set the juice aside. Then I just cut up the rinds to add the sugar to. It was a lot less work for the same result. Great for summer parties with kids. Serve with a shot of vodka for the adults and a sprig of mint. Yum!

Shrimp Scampi with Linguini

The flavor was excellent and the sauce did well even into leftovers the next day. Next time I will only use a 1/2 box of linguini and a little more shrimp and tomatoes. I served this to friends and ended up with a lot of plates with just sauce and no shrimp.

Cool Lime Pie

Excellent recipe that was a snap to make. I made it the night before a dinner party and put the sugared limes on before I brought it out. Huge hit with the pretzel crust. I thought this might be a little "campy" but the gourmands at my party disagreed!

Cinnamon Coffee Cake II

This was a great coffee cake! I actually made it three days before I needed it for a brunch and kept it in the basement covered in plastic. It was super moist and beautiful in a bundt pan. This will now be a staple in my recipe box. Oh yes, only use 1/2 cup of oil.

Chicken Pot Pie IV

This worked great. I doubled the recipe and froze the second pie for later. To make it even easier, I made them with pre-made pie crusts from the grocer's freezer. I used a combination of Bisquick and milk to create the top crust of the pie. Just put enough milk in to create a dough and roll it out. Very easy and visually very pretty.
