Coconut Poke Cake

This was excellent! I made it a day ahead, used whole eggs instead of egg whites as the cake box called for. I think letting it sit allowed for the cake to soak up all the liquid.

White Bean Chicken Chili

I make this a lot and everyone loves it! I modify it by adding an extra can of beans, Great Northern beans, a 1/2 block of cream cheese and extra green chiles. I also skip the tomatillos and just do a jar of green salsa.

Pumpkin Cookies VII

These were incredible! They are so moist, so yummy. I didn't frost them, but added butterscotch chips to the recipe and it was just enough sweet. I also had to bake them about 4 minutes longer, but I probably made bigger cookies too. Thanks for sharing!

Chicken Enchiladas V

Absolutely terrific! I made a couple of changes: I added another can of green chiles to the soup mixture and I used whole wheat tortillas with no difference whatsoever (and much healthier for you!) I highly recommend this recipe.

American Lasagna

This lasagna was incredible! The only changes I made were to use hot ground italian sausage (pork) and then I used cottage cheese instead of ricotta. This was the best lasagna I've ever had!

Pumpkin Bread II

This was really good. I too cut the sugar by about 1/4 cup and used 1/2 cup applesauce and 1/2 oil in place of the 1 c. oil. It was still super moist. A big note though--this recipe took nowhere near an hour! It was about 1 hour 40 minutes. I wonder if the oven temp. is too low? Anyway, just be prepared. Also, there is way too much mix for two pans. I'd leave a good inch below the pan, mine spilled all over my oven and now I have a huge mess to clean up!

Cranberry-Black Cherry Gelatin Salad

Very good, everyone loved it! I would remind other cooks to make sure to use room temperature sour cream or it will curdle and use a whisk to completely blend the sour cream in.
