Angel Hair with Feta and Sun-Dried Tomatoes

This is one of my favorite recipes, and it works well reheated also. I like to buy sundried tomatoes in oil because they are soft and easy to cut with kitchen scissors. I substitute the leftover oil for the olive oil in the recipe, and sometimes use less than 1/4 cup to keep it from being too oily. The tomatoes are the best part, so I usually put extra! Such a great combination of flavors....

Best Peanut Sauce

I am in the Philippines and had some of the locally made peanut butter at home, as well as the dregs of a container of chunky store-bought peanut butter. I used both to come up with my 1/2 cup, and heated up the water to get the rest of the peanut butter out of the container. Since the peanut butter I have is pretty sweet I skipped the sugar. I didn't have hot sauce, so I substituted 1/2-1 tsp. of cayanne pepper instead. I am a fan of garlic, so I used two cloves and added 1 tsp. powdered ginger and 1 1/2 Tbls. lemon juice. It was all very easy to put together and the previous reviews made it simple to personalize. The only thing that would have made it any better is if the seal hadn't given out on the food processor attachment to my blender! My hard-to-please Filipino hosts loved it.

Chewy Cocoa Brownies

I am a volunteer serving in the Philippines on a very slim budget, but I love cooking and baking. I spent a good deal of time using the allrecipes ingredient search to find a brownie recipe with ingredients that I would be able to find easily, mainly cocoa powder instead of chocolate squares. I had never made brownies from scratch, but this recipe yields the best brownies I have ever had, and everyone here in the Philippines absolutely loves them! I even used the local cocoa. Even though I had to use someone else's oven to make these brownies, they were well worth it and will continue to pop up at all festive occassions!

Ty's Barbequed Chicken

I liked this recipe for it's simplicity and use of on-hand ingredients. I cut the breasts into strips and marinated for a few hours. I poured the whole thing into a baking pan and put it in the oven at 350 for 20 minutes. I turned off the oven, poured the sauce into a pan and put the chicken back in the oven to stay warm. I added 1 1/2 Tbsp. cornstarch to the sauce, brought it to a boil and added it back to the chicken. This could be a one-dish deal if you baked the chicken in a cast-iron skillet and left the chicken in while adding the cornstarch.

I'm not quite sure why I tried this recipe so many times--I think I was worried I was screwing it up! I tried several variations of flours, baking spices, honey, oil, even chocolate chips. All yielded variaties of flat, rubbery pancake. I appreciate that it requires few ingredients, but that doesn't compensate for the lack of flavor.

Onion Pasta

I liked the looks of this recipe because of the simplicity of ingredients. I am a volunteer in the Philippines, so my budget is limited and I really have to stick with local foods. I was pretty disappointed with this meal--too greasy even though I cut back on the oil, and just not a lot of flavor. I am tempted to try it again because it still sounds good in theory and is affordable. Maybe it will work out better next time.

These pancakes were delicious--just what I was looking for with simple ingredients that are usually on-hand. The pancakes were very fluffy and just slightly sweet. The best part was that I refridgerated left over batter the and pancakes came out just as well two days later!
