Zucchini Yogurt Multigrain Muffins

I really like this recipe. I ground my own wheat flour and oat flour. I didn't have applesauce so I put an apple with a quarter of a VERY ripe pineapple and blended that together for my applesauce. I only gave them a four star as even though my son said they were awesome, he also said he would have like to have cinnamon in them. I told him there was two teaspoons inn them. I have to agree with him as I could hardly taste the cinnamon too. Otherwise, great recipe.

Roasted Beets with Feta

Very nice beet recipe. I followed the recipe as stated but had a flavored (pomegranate) balsamic vinegar. By the time we got around to eat the salad it was more room temp then warm. I love the way the parsley added a freshness. I think the only thing missing was a hint of garlic. That would have made it five stars for me. I will probably attempt this again adding minced garlic to the dressing.

Aunt Norma's Rhubarb Muffins

I love rhubarb and this is a great recipe. I followed the recipe with the exception of using 1/3 cup instead of the 1/2 cup measure. It was not a preference, I just read my measuring cups wrong. With this mistake, they are still tasty and moist. Thank you for the recipe.

Overnight Pork Roast With Cabbage

I halved the caraway because I don't like it for the meat rub and left it out completely when sautéing the vegetables. I didn't have beer in house so I used a little rice wine vinegar and that seemed to work. I tried to follow the recipe as close as possible otherwise. I put it in the oven, went to a kids sporting event and when I came home the house smelled delicious. The meat and vegetable were very tasty. I used a whole head of cabbage and still would have like more. Even tastier the next day!

Brown Sugar Cream Cheese Frosting

T's Sweet Potato Fries

I liked this recipe a lot. I did put them in microwave for five minutes like the recipe states, however, they did not get crisp in the oven. I wanted them a little crunchy that's why only the four stars. The spices wee nice. My youngest had seconds so I guess he liked them too. Of course, he did eat them with ketchup.

Asian Tuna Patties

I didn't taste much of the Asian flavoring but nice taste anyway. I followed the recipe as written with exception of the tuna. The canned tuna sizes have gone down to 5 oz instead of 6 oz, so I added a third can. I did forget to coat the outside with the cornmeal. I don't know if I would do this recipe again without some changes. I served it with baked sweet potato fries and steamed asparagus. Nice meal.

Kale and Quinoa Salad

I loved this recipe. I made as written and it made a lot so I had leftovers for two days. It remained crisp until we cleaned it up. I served with the pesto spinach chicken from this site and it made a great meal. I will be making this recipe again and again.

Bean Quesadillas

I agree with other readers that it is a little bland as it stands BUT it is so versatile so do what you want. Kids love it and it is filling. I put it on a griddle pan but like to see that some have put it in the oven. I think I'd like it that way, too.

Vegetarian Chickpea Sandwich Filling

Nice recipe that I'll be making in the future. It's nice that the ingredients are something that you can keep on hand. With two school aged boys, it's nice to have something different for their lunches. I did throw in a dusting of cumin and garlic salt to perk it up. This seems like a recipe that is easily adapted to add any of your favorite ingredients. I served it in a toasted pita with a variety of lettuces, sliced tomatoes and cilantro, with a serving of fresh strawberries on the side. Very satisfying.

Paleo Chili

I used this recipe because the spices that I normally use was gone. I wanted to try something a bit different and I had all the ingredients. I used canned chipotle peppers instead of dried. I also made the chili like I normally do by adding beans. I used venison for the meat. Oh, and I also used my own canned salsa. It was a bit more spicy then I'm used to but it was good. I added Greek yogurt to the top to help curb the heat. My boys had seconds.

Curried Coconut Chicken

I followed this recipe only with the exception that I had to substitute 1 Tablespoon green curry paste for 1 Tablespoon ground curry as I only had one tablespoon ground curry. This is a great, great recipe. I put in a whole onion and my picky son didn't even notice and ate everything. The other son stated that this recipe was awesome. I will have to remember this recipe to do over and over again. It was great over brown rice.

German Pancake with Buttermilk Sauce

The first words uttered by my son was "Ymmmmm, gosh this is good". I made it just as it states with one altered step. I have made Carmel corn several times and the favorite recipe I use is a bit different. I've read the complaints about the "growing out of the pan" issues when making the sauce. So when I made the sauce, I did it in the manner in which I make Carmel sauce for popcorn. Wait until the end to add the baking soda. When the sauce gets the consistency that you want (7 minutes is right in the ballpark) remove you pan from the heat THEN add your baking soda with the vanilla and you will not have any mess. It will foam up as your stir it in, but will et corporate without going over the rim of the pan. My sauce tasted excellent and I did it in this manner. The pancake recipe was nice, but I like the recipe I submitted better, Fresh Strawberry Puff Pastry.

Sous Vide New York Strip Steak

I thought this recipe was wonderful. I had a hard time keeping my water at 130 degrees so the meet was more cooked than I wanted. It browned so beautifully before and after the water bath. I used brown portabella mushrooms. The sauce was so good. This was my first time doing sous vide. The meal was awesome served with pesto zucchini .

Great recipe. I did not put the pecans in after I prepped them because I felt that they were on the edge of being bad. The salad was great without them but think it would be even better with the pecans.

Although this recipe is quick and I think it is a good start to build on, I believe that this recipe could and should be tastier as I am someone that loves spinach. My boys who also like spinach tried to take their plate to the sink without eating it.

Campfire Banana Splits

Fun recipe. The banana gets sweeter with cooking it. I had to return the banana to the fire a couple of times to get the marshmallows to melt so don't be afraid to put the banana in a hot spot of fire.

Kale, Swiss Chard, Chicken, and Feta Salad

Tried the recipe as it is and is very good. I have a great store near me, Oro, which sells great blends of olive oils as well as balsamic vinegars. This recipe good with all different mixtures I came up with so do experiment or use the dressing you like.
