Raspberry Lemon Muffins
These turned out very well, I made two batches with some changes after reading the reviews. I used raspberry greek yogurt instead of plain, added one egg yolk, 4 TBSP of fresh lemon juice, an extra 1/2 cup of raspberries and did not use lemon extract. I definitely suggest using the zest if you skipped it and did not like them- it makes a big difference in the taste. These are very good- Taste slightly healthy, but not in a bad way. They are a little bit dense and the muffin is a little chewy if you cook it for too long but the fruit makes up for it. Be very careful to not overmix this or it will turn out very tough and hard- you want some small lumps in the batter.

Easy Broccoli Quinoa Soup
Editing my review because I personally do not like it, however i'm sick at the moment and my tastebuds may be screwed up. My mother however LOVES it.. For those of you that have never had quinoa, she says it tastes similar to barley. She also says this tastes a lot like cream of broccoli soup- something a few other reviewers have mentioned. So, perhaps it really is good, i'm not sure. I had to cook the quinoa for longer than expected because there did not seem to be enough liquid for it to absorb to become fluffy naturally. May try it again with chicken broth instead of bouillon and maybe a different kind of quinoa.

Corn Muffins
These came out very well. I used 1 tablespoon of white vinegar in a cup of milk and let it sit for 10 minutes in place of buttermilk, but otherwise followed the recipe exactly. These came out much better than I was expecting and are probably the best corn muffins i've ever had, rivaling even my grandmother's. Very happy with the result. :) The only thing I might try next time is a few minutes before I take them out of the oven, i'll brush the tops of them with a little bit of butter so they get a little more golden. They cooked perfectly and the sides and bottom are perfectly brown, it's just that the tops are still pale though that may just be because of my style of oven. 5 star recipe though, my thanks to the uploader for what will likely be something I make often.
