Thanksgiving Leftover Casserole

I followed the recipe, but added leftover corn and mushrooms. It was not mushy or bland. I will make this again. Like others have said, this is an easy to reipe to modify to taste. The entire casserole disappeared quickly!

Portobello Pizza

I'm giving this 5 stars because it is cheap, quick and easy and my husband loves it. I didn't like it that much. He will eat all six portobella pizzas, if given half a chance. Experiment with the amount of cheese, cooking time,garlic and spices.

Italian Sausage and Zucchini

This is a very quick and easy recipe that tastes great. I do love fresh zucchini and squash, and those flavors are highlighted in this recipe. I left out the onion due to my husband's preference. Otherwise, followed the recipe. Highly recommended. Thanks, Michelle W.

Eggplant Parmesan II

I will make this again. I used one eggplant and eyeballed the remaining ingredients. Like another person posted, this recipe is more like eggplant lasagne than eggplant parmesan, but that may depend on how big a pan is used to layer. One layer would be similar to parmesan. I used a 2 quart casserole and had 3 layers. This was good. Alter the cheese and sauce to taste.

Leftover Special Casserole

This is a great base for a casserole. I used chicken instead of ham and cream of celery soup because it is what I had on hand. I added a couple handfuls of cheese (a pre-shredded "Mexican" blend), out-of-a-jar mushrooms,and sprinkled the top with parmesan cheese. I also sprinkled oregano on the casserole, but I do not recommend that, as it gives it a weird after taste.

Slow Cooker Chops

The pork chops were tough. The sauce was ok - it tasted like what it was ... cream of mushroom soup. I added garlic to try to add flavor, but it didn't help much. I will probably not make this again. There are better slow cooker pork chop recipes on this site. In sum, it was bland but passable.

Pork Steaks

5 Plus stars for ease and deliciousity. I didn't have green onions, and I only had 3 loin chops, bone in. Otherwise, followed the recipe. I cooked each side, covered, for about 8 minutes (maybe less) on medium low, and they were done. Very good and fast.

Skillet Ham, Cabbage and Potatoes

this recipe is quick, easy and takes alterations well. i took others' advice and browned the potatoes first with the seasoning, then added about 1/2 can of chicken broth let it simmer then near the end of the cooking time, added the ham. just before taking the pan of the heat, i added a handful of shredded cheese. my husband ate the whole thing and raved about it.

Oven Baked Jambalaya

Lots of wiggle room for substitutions and additions here for the meat of the meal (fish, shrimp, ham, sausage, etc.) I think the seasoning mix in the recipe makes the meal. It had a kick, but was not too spicey. I halved the recipe, and it was a lot of food. I made it in the slow cooker, and it was still good... though I had to thicken it up with a little flour. Pork Chops for the Slow Cooker

I started with frozen solid boneless pork chops and started cooking for 4 hours on low. I used 1/3 c soy sauce and a generous squirt of honey, based on others' comments. They looked done after 4 hours on low, and I ate one after coming home from work. The chops were dry, the sauce was thin, but the chops were good with the sauce on them. For my husband, who would be home 1-3 hours later, I added corn starch as others suggested and turned the crock pot to warm. Two hours later, I turned the crock pot off. When my husband came home, soon after I turned the crock pot off, the pork chops were tender and not dry, the sauce was thickened and he raved about them. Add enough corn starch and it's almost a barbeque type sauce or like the thick sauce Chinese restaurants sometimes serve.

Sweet Polish Sausage

Mmmmm mmmmm. A welcome alternative to the usual ways to prepare polish sausage. Seems to be a flexible recipe as far as time goes, and very easy. I boiled for 1/2 hour and baked for 1 hour. Onions were omitted due to husband's dislike of onions.

Buffalo Style Chicken Pizza

The husband loves this. We like ranch dressing better than blue cheese, and use Frank's Red Hot chicken wing sauce. We use Boboli pizza crusts. Go easy with the sauce on the dough, and reserve it for dipping, or the pizza can get soggy. Good use for left over chicken.

Zucchini Boats on the Grill

This sauce was delicious. The only "problem" was that the flavor didn't seep through. So, be sure to reserve some for dipping, or otherwise make sure the flavor can permeate the chicken.

Grilled Pork Tenderloin

I followed the recipe and my tenderloin turned out too "peppery". I think I may have overcooked the tenderloins, because they were a little dry. Keep an eye on how much seasoning is on the pork, and don't overcook.
