Spinach Artichoke Feta Ball
Every year I amasked to bring the cold spinach dip made with vegetable soup mix, but I needed a change. This recipe is AWESOME. To quote my brother it was was "restauraunt quality". I doubled the cream cheese, used the whole container of feta cheese, and halved the ranch mix as others suggested. Served with pita chips, bagel chips, and tortilla chips. If I could give it 10 stars I would!

Herb Roasted Pork
I was never a big pork fan until now! Bought a sliced pork roast on clearance and didn't know what to do with it. Tried this recipe and was impressed, a Monday night run of the mill dinner tasted like an expensive celebratory meal. I doubled the rub and added some vegetable oil to make the herbs spread better. I rubbed the herbs on each side of the pork slices, put each slice in a single layer in a 13X9 baking dish, covered with foil, and baked for three hours. As for the glaze, I used brown sugar in place of white, and used red wine garlic vinegar because it's what I had on hand. I served the glaze on the side because my daughter didn't care for the glaze but it totally made the pork loin special. Will pull her slice of pork out next time and glaze the rest as called for! Served with scalloped potatoes and onions from this site, along with simple green beans. So GOOD!

Scalloped Potatoes and Onions
I mixed in 1 cup shredded mild cheddar cheese before baking then added another cup of cheese sprinkled over top 15-20 mins before the end of baking time. Also added 1/2 teaspoon garlic powder and used 2 chicken boullion cubes to 1 3/4 water instead of chicken broth because it's what I had on hand. Served with pork loin and green beans. Recipe and meal were both delicious!
