I made a mistake by shredding potatoes and adding them into the mix instead of the recipe's frozen hash browns. If you go this route, I suggest cooking the shredded potatoes on a large griddle with the diced onions and bacon grease. Otherwise, the potatoes don't cook evenly, and you get crunchy, undercooked potatoes. Other than my mistake, the recipe was excellent. I prepped the casserole the night before and popped it into the oven in the morning. I took another's suggestion and broiled the casserole an additional five minutes to get a nice golden brown texture on top.
