A very tasty recipe. After reading the reviews that suggested more rice could be added, I kicked up the rice to 1 1/2 cups instead of one. I also followed the advice of another reviewer who said to let it simmer for a bit before adding the rice, so I simmered it for about 25 mins before adding the rice. The combination of additional simmering and rice caused me to have to add about another cup of water during the course of the cooking. The one other alteration was to double the cayenne pepper to 'kick it up a notch'...
