Love to cook, don't do it enough! Trying to start good, healthy habits in the kitchen.
My favorite things to cook
I love using my Crock Pot! My goal is to use it at least twice a week. Otherwise, I'm not particular about what I make, just need to expand my repertoire and get better at the basics.
My favorite family cooking traditions
I come from a fairly large Hispanic family. We love getting together and cooking for just about every holiday. Tamales at Christmas is absolutely my favorite family tradition, but we don't limit our cooking to Hispanic meals, and just getting the group together, even for something small is very special to me.
My cooking triumphs
I make some mean green chicken enchiladas! My pulled pork and pasta salad are also pretty popular around my circle.
My cooking tragedies
Definitely butchered Chicken Parmesan last year. It was quite tragic; I still haven't fully recovered. Didn't burn it or anything, it was just horrifically bland. Also, cannot for the life of me cook rice. It never cooks through all the way.

Nana's Slow Cooked Meaty Tomato Sauce
Turned out great; I used it to make lasagna. I would use just spicy Italian sausage next time. :)

Healthier Creamy Au Gratin Potatoes
Turned out good, would have a liked it a little more cheesy- may try the "less healthy" version next time.

Slow Cooker Chile Verde
It was good! I eliminated the can of tomatoes; wish I had a can of tomatillos to throw in. Added a can of dices green chilies and another can of diced jalapenos because we like it spicy in my house. Needed salt. I'll probably follow reviewer Donna's recipe next time just to see. I've been a bit spoiled; my grammies and aunties make the best chili verde I've ever had, but I now live in a different state and haven't been able to recreate it without them, so I'm looking for new! :)
